What recipes do you use tarragon in?

I was looking at my spice rack and noticed that I have never once used tarragon. I am just curious... What do you usually put it in?What recipes do you use tarragon in?

Teresa's got you covered. The only thing I have to add is use sparingly the first time you try it. Tarragon's flavor is odd to some folks. I don't much care for it.

its usually used fresh and goes well with fish or eggs.French cooking possibly uses the most.
