This is a winner every time. It sounds unusual, but is very good. I like to add a tablespoon of sugar to the recipe. It helps bring out the flavors.
Thai Peanut Soup
1/3 cup finely chopped onion
1/3 cup finely chopped celery
2 tablespoon finely chopped red sweet pepper
1 tablespoon margarine or butter
3 tablespoon all-purpose flour
1 tablespoon very finely chopped lemongrass (white portion only) or 1 teaspoon finely shredded lemon peel
1/4 teaspoon ground red pepper
1 (14-ounce) can chicken broth (about 1 3/4 cups)
1 (13 1/2-ounce) can unsweetened coconut milk (about 1 1/2 cups)
1/2 cup creamy peanut butter (more if you like)
1 tablespoon soy sauce
1/4 cup chopped peanuts (optional)
2 to 3 teaspoon snipped fresh cilantro (optional)
4 to 5 thin red sweet pepper strips (optional)
1. In a medium saucepan cook onion, celery, and finely chopped red sweet pepper in hot margarine or butter about 4 minutes or until vegetables are tender, stirring occasionally. Stir in flour, lemongrass or lemon peel, and ground red pepper. Add chicken broth and coconut milk all at once. Cook and stir until mixture is slightly thickened and bubbly. Cook and stir for 1 minute more.
2. Add peanut butter and soy sauce; stir until well blended and heated through. If desired, top each serving with peanuts, cilantro, and red pepper strips.
Makes 8 appetizer or side-dish servings.
Cooking Tip: To make a more hearty soup, add 1 to 2 cups of cooked chicken breast cut into bite-sized pieces
Hello :) Here's one you might like....
Summer fruit Soup
1 tablespoon minced ginger
3 cups chopped strawberries
2 cups chopped pineapple
1 1/2 cups chopped mango
2 pieces lemon peel
2 pieces lime peel
2 pieces orange peel
4 cups water
1 cup sugar
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice

Mint sprigs, for garnish
Saute the ginger in a medium pot over medium-high heat until fragrant, about 2 minutes (no oil is necessary.) Add 2 cups strawberries, 1 cup pineapple, 3/4 cup mango and the lemon, lime and orange peels; cook for another 2 minutes. Add water, sugar and fruit juices and bring to a simmer, stirring occasionally. Simmer for 5 minutes and remove from the heat. Allow mixture to cool slightly and then transfer in batches to a blender or food processor. Puree and strain into a large bowl. Add remaining 1 cup strawberries, 1 cup pineapple, 3/4 cup mango and blueberries. Stir to combine, cover and refrigerate until well chilled. Serve with mint sprigs for garnish.
Homemade italian Soup:
1 lb of italian sausage (sweet mid or hot)
1 package of sweet italian turkey sausage links, as in hot dog size(or just regular sausage links)
1/2 lb of orzo (half of a lb package, roughly)
2 cartons of Swanson chicken broth, or beef
2-3 cups of water
half stick of BUTTER (not margerine, you will lose the flavor)
Any kind of vegetable that you would like that goes well with soup (i.e. corn, greenbeans, beans of all sorts, mushrooms, etc.)
Cook the ground sausage with some garlic or seasoning of your choice if wanted, or no seasoning at all. Add 1 cup of water and the sausage links. Cook the sausage until the sausage is almost cooked through: remove and slice CAREFULLY! The sausage is really tender and tends to get squeezed out of the wrapping. Add the rest of the water, chicken broth and vegetables of your choosing. Cook until just about ready, then add the orzo and let cook for 8-10 minutes. Serve with slice french bread for dipping purposes!
I cooked with oregano, italian seasoning, basil (fresh), thyme (fresh), and bay leaves (2, fresh.)
My family kids included love cheesburger soup.
You need one small onion sauteed in oil or butter.
