Does anyone have any good potato salad recipes ?

I decided to ask a fun question, and I'm in the mood to try a new potato salad . Does anybody have any good ideas ?Does anyone have any good potato salad recipes ?
There are a multitude of potato salad variations. This site has two basic recipes and a wide variety of optional additions that can be added to either one to make for a nearly endless list of possibilities.

Three Potato Salad





Ingredients


1 1/2 pounds small red potatoes


1 1/2 pounds small Peruvian purple potatoes


2 pounds yams


4 tbsp.scallions, chopped


2 tbsp. Dijon mustard


2 tbsp. mayonnaise


2 tbsp. lemon juice


2 tsp. celery


salt and pepper, to taste


Cooking Directions





Wash all the potatoes.





Cut the yams into quarters.





Wrap the potatoes in foil. Place all the potatoes in the foil in a single layer on the grill and roast for 30 minutes. Remove the potatoes from the grill and allow them to cool. Cut the red, Peruvian purple and half of the yams into 1/2 inch pieces. Take the remaining pound of yams and remove the skin. Blend the skinless yams, mustard, mayonnaise, lemon juice and celery seed until smooth. Fold in the scallions and cut potatoes and season with salt and pepper. Refrigerate for two hours before serving.
World's Best Potato Salad


6 medium potatoes


1 small onion, finely chopped


1 cup celery, chopped


1 teaspoon salt


6 hard-cooked eggs, diced





2 eggs, beaten


1/2 cup white sugar


1 teaspoon cornstarch


salt to taste


1/2 cup vinegar


1 (5 ounce) can evaporated milk


1 teaspoon prepared yellow mustard


1/4 cup butter


1 cup mayonnaise

DIRECTIONS


Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, 1 teaspoon of salt, and hard-cooked eggs.


While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.


Stir the dressing into the bowl of potato salad gently until evenly coated. Chill several hours or overnight before serving for best flavor.
I love potato salad!





Here's how I make mine:





Chop a few potato's, throw it in a pot and boil it till its tender but firm.





Chop up an onion and a few gherkins.





Boil 3 or 4 eggs and chop them up as well.





Throw everything together.





Here's my secret (was a secret):





Throw in a few heaped spoons of ';Crosse and Blackwell Mayonnaise'; If you cant find it in your store, you don't live in South Africa. Go check if there's a South African Shop near you and get it!


The more Mayonnaise the better!





Throw in a bit of Aromat (check for it at your South African Store), salt and pepper.





This is the best potato salad and if someone tells you different THEY ARE LYING!





If you cant finish it the same day, don't worry. Its even better the next day!
