I want to make enchiladas...any easy recipes that are good and not too time consuming?

EASY ENCHILADA CASSEROLE


1 1/2 lb. ground beef or ground turkey


1 1/2 lb. Velveeta cheese, cubed


1 can cream of mushroom soup


1 can Rotel tomatoes, mild or hot


1 pkg. corn tortillas


1 can chili beans, black beans, pinto beans or refried beans (or use a combination)


1 can Mexican corn, drained


1 onion, chopped


Corn chips, crushed


Brown ground beef in skillet, stirring until crumbly. Combine cheese, soup and Rotel in saucepan. Heat until cheese is melted, stirring constantly.


Layer tortillas, ground beef, beans, corn, and onion in 9 x 13 inch baking pan. Spread cheese mixture over layers. Top with corn chips. Bake at 350 degrees for 20 minutes.





EASY ENCHILADAS, CHICKEN OR BEEF


1 clove garlic, pressed


1 sm. can mushroom pieces, optional


1 lb. ground meat, cooked or cooked chicken, cubed


1 (10 oz.) longhorn or Cheddar cheese


1 pkg. corn tortillas


1 can Cheddar cheese soup


2 cans cream of mushroom soup


4 oz. chilies or picante sauce, optional


1 carton sour cream


Cook meat. Add garlic, chilies and mushrooms. Cook 5 minutes. Combine soups and sour cream. Add to meat mixture. Stir well. Cut tortillas into thirds. Layer in pan and cover with Cheddar cheese. Bake at 350 degrees for 45 minutes. Serves 6 easily.I want to make enchiladas...any easy recipes that are good and not too time consuming?
';Enchilada Casserole'; - Serves 6 to 8





1 lb. ground beef


1 cup diced onion


1 (8 oz.) can tomato sauce


1/2 cup water


2 tbsp. chili powder


1 tsp. salt


1/4 tsp. freshly ground pepper


3 tbsp. lightly salted butter; softened


6 corn tortillas


1 (4 1/2 oz.) can olives; drained and chopped


2 cups grated Monterey Jack cheese


1 large tomato; sliced





Preheat oven to 400*.


Brown ground beef with onion about 5 minutes; drain excess fat. Stir in tomato sauce, water, chili powder, salt and pepper. Simmer, uncovered, 10 minutes longer.


Spread butter on tortillas; set aside.


In 2-quart casserole, layer first the meat sauce, then chopped olives, cheese, and finally a tortilla. Repeat several more times, ending with meat sauce and cheese. Top with tomato slices.


Bake 20 minutes, until heated through and bubbly.I want to make enchiladas...any easy recipes that are good and not too time consuming?
Other than baking something that's in the frozen food isle...I take canned enchilada sauce, green or red, which ever you prefer. Place it in a frying pan, turn heat on low. Grab your corn tortillas and place them in hot frying oil, one by one. (just like taco shells) YOU DON'T want to fry them hard, just a little stiff that they don't fall apart when you roll them.


From the oil to the sauce then on a cookie sheet. Grab your ';filler'; ie;cheese and place it directly in the middle of the tortilla. Roll it up and place them close to each other so that they fit tight. Repeat the process until you have all that you need.


This is not a super quick recipe, but once you get the hang of the process you can get through it pretty quickly.

EASY BEEF ENCHILADAS


1 Lb. ground beef


1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce


6 oz. (1 1/2 cups) shredded cheese


1 (12-ct.) pkg. Ole El Paso Flour Tortillas for Soft Tacos %26amp;


Fajitas





Heat oven to 375*F. Brown ground beef over medium-high heat


until thoroughly cooked; drain. Stir in 3/4 cup Enchilada sauce


and 1 cup cheese. Spoon enchilada filling onto tortillas;


roll-up and place seam-side down in lightly greased 13 x 9 x


2-inch baking dish. Pour remaining enchilada sauce over top;


sprinkle with remaining 1/2 cup cheese. Bake at 375*F for 15 to


20 minutes. Makes 12 Enchiladas

Quick-N-Easy Chicken Enchiladas





One of our favorite recipes is chicken enchiladas. It's so easy to make. You get corn tortillas and buy seasoned chicken breast strips.Add Monterey jack cheese and cheddar cheese, some diced green chilies, onions, black olives and whatever else I feel like adding to it. Sometimes I add a couple of spoonfuls of salsa as well. Dip the tortillas in heated green enchilada sauce until pliable. Fill with onion, chicken, grated cheese. place then in a greased baking dish (ladle some sauce in the bottom of the dish) seam side down. Ladle sauce over rolled tortillas and top wioth cheese. Bake at 350 for 20 minutes.





You can convert this to just plain cheese enchiladas or beef.
