Al's Super Weekend Spectacular
3 cups water
1 1/2 cups rice
1 1/2 pounds boneless pork roast
1/2 pound pork liver
2 pounds of shrimp
2 onions
6 green onions, chopped
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne pepper
1 teaspoon liquid hot pepper sauce
1. Place boneless pork roast, pork liver and shrimp in separate saucepans, cover with water, and bring to a boil.
2. Skim the surface, reduce the heat, and simmer for about 1 hour.
3. Drain both the roast and the liver, reserving 1 cup of the liquid from the pork roast.
4. Cook the rice in the 3 cups of water according to the package directions.
5. While the rice is cooking, grind or chop the meat with a food processor, adding part of quartered onions during each batch. Be careful not to over-process. The meat mixture should still be in pieces, but not like pate.
6. In a large bowl, mix the meat mixture and the reserved liquid with chopped green onions, salt, pepper, cayenne pepper, and liquid hot pepper sauce. Mix well with the prepared rice, heating until warm, about 5 minutes.Anyone have any favorite (and EASY) dinner recipes to share?

Fettuccine Alfredo
Ingredients:
1 cup of heavy cream
2 oz. butter
1 pound of fresh fettuccine
1 cup heavy cream or half and half
6 oz. Freshly grated parmesan cheese
Salt to taste
Freshly ground black pepper
directions:
Combine the cream and butter in a saucepan. Bring to a simmer and reduce by a fourth. Remove from heat and set aside. Bring salted water to a rolling boil and add the fettuccine. Cook until just al dente, or firm to the bite. Drain.
In a skillet, combine the cream and butter mixture with the cooked noodles. Toss well until the noodles are coated. Add the remaining cream and cheese and toss well to mix. Divide onto two plates and season with salt and fresh pepper.

Recipe Summary

Yield: 4 servings
3/4 cup pure maple syrup, eyeball the amount
1/3 cup dark soy, Tamari, eyeball the amount
1/2 cup sweet hot mustard, eyeball the amount
1/2 cup sesame seeds, a mix of black and white or all white
1/4 cup vegetable oil, 3 or 4 turns of the pan, total
1 1/3 pounds chicken breast tenders
Salt and pepper
Dressing:
1 1/2 inches fresh ginger root, grated or minced
3 tablespoons rice vinegar, 3 generous splashes
1/4 cup Chinese duck sauce or, apricot all fruit spread
1/4 cup vegetable oil, eyeball the amount
Salad:
5 to 6 ounces mixed baby greens, 1 bag
1 /4 English or seedless cucumber, halved lengthwise then thinly sliced on an angle
1 /2 cup shredded carrots, a couple of handfuls
4 scallions, thinly sliced on an angle
1/4 pound snow peas, sliced on an angle
Fried Chinese noodles for garnish, perhaps leftover from take out, optional
Combine syrup, soy and sweet hot mustard in a bowl. Season chicken tenders with salt and pepper on both sides. Add chicken tenders to 1/2 of the marinade and coat. Set aside. Reserve the remaining 1/2 for dressing. Preheat a large nonstick skillet over medium high heat. Spread sesame seeds on a sheet of waxed paper or into a shallow dish. Waxed paper will speed your clean up. Dip the tenders into the sesame seeds. Coat the pan with a thin layer of oil. Cook chicken in small batches 3 minutes on each side and remove to plate.
Whisk ginger, vinegar and the reserved marinade together then stream in the oil while you are continuing to whisk dressing.
Combine all of the salad ingredients in a bowl. Toss with dressing and serve, topping with sesame chicken tenders. Toss some crunch into your salad with fried noodles, if you have any leftover packets from ordering Chinese take out, for the last time!

I don't know if you have the Food Network but Rachel Ray's 30 minute meals are wonderful. I have two of her cookbooks and her new one 365 meals, I've heard, is great too. I don't always follow her recipes but it gives me an idea.
Something I just made last week and the kids loved was honey glazed smoked sausage.
6 potatoes thinly sliced
baby carrots, chopped
1/2 onion chopped
1/2 red bell pepper chopped
zuchini, broccoli or what ever other veggie you like
in an electric skillet or a large frying pan, add 2 tbsp olive oil and fry your veggies until tender. Add sliced beef smoked sausage after about 10-15 minutes. Cook until veggies are tender. Let them get brown and crispy.
Sauce:
1/2 cup honey
5 shakes lite soy sauce
1 cap full of Dales marinade (any dark marinade or even worsishire will do)
1 tsp fresh grated ginger
Mix together and add to cooked veggies and sausage. Let simmer for about 5 min or until glaze is thicker.
Your entire meal is in one pot. A toss salad, fruit and you have a quick and easy meal in 30 min.

cheesy tuna noodle
you can adjust amount how ever you want.
boil 2 bags of egg nodles in water: drain
in large bowl: mix noodles 4 cans of tuna(in water) any frozne vegetables you want( i use peas and carrots) 2 bags of shreeded cheeder cheese(in my store they have shreeded casserole mix) about a half of a cup of milk.. a couple tablespoons of butter, salt and pepper to taste.
preheat oven to 350% and grease baking dish. spoon mixture in to dish. put bread crumbs, cracker crumbs or potato chip crumbs on top..a couple of sprinkles of cheese and a couple little pats of butter...bake for about 20 mintues until all cheese is melted and top is crunchy
Easy BBQ Chicken
Ingredients
Chicken pieces (breast, leg, thigh, etc.)
BBQ sauce from store
In a pot boil the chicken pieces for 20-30 minutes
In a baking dish, add the partially cooked chicken.
Add your favorite BBQ sauce.
Cover baking dish with foil and bake at 325 degrees for 15 minutes or until chicken is cooked.
If you wish to add some extra flavor for the sauce, while the chicken is boiling try this:
In a bowl add the BBQ sauce, 2 tbsp honey, 1 tsp of dry basil (or your favorite herb /spice) and some crushed peppers. When its time to add the sauce, pour or brush that mix on the chicken before baking.
I make chicken pasta thats fast and easy all the time.
1 can of white chunk chicken (in water NOT oil)
1/2 box of elbow or bowtie nooodles
2 to 3 cups of mayo ( amount is depending on your preference)
2 cups shredded cheddar cheese
1 small chopped onion (optional)
salt, pepper, garlic salt to taste
All you do is cook the noodles then drain. Then take all the ingredients but the cheese and mix together. Lastly, sprinkle the cheese on top. Best served while still warm.

Chicken Tortilla Casserole
Mix 2 cans of cream of mushroom soup, 1 can of cream of chicken soup, and 1 (10 oz) can of chicken broth. Add 2 cups of shredded cooked chicken. 1/2 cup finely chopped onion, and 1 can of chopped green chilies. In a 9x11 or 11x13 pan (I prefer glass) put a layer of flour tortillas (about 5) you can cut them to fit pan if you want. then put a layer of the chicken mixture then put shredded cheese on top of the mixture. Then repeat the layers starting with the tortillas again. Sprinkle shredded cheese on top and bake uncovered at 375 for about 25 minutes. Absolutely delicious. Total time including bake time... 35 to 40 min.
-First brown some chicken and some onions, peppers, mushrooms or whatever vegetables you like in a little bit of olive oil in a pan/wok.
-Then sprinkle three big spoons of medium-hot curry powder over it (you need enough to cover the meat and veg).
Add:
-A tin of chopped tomatoes
-A small tin of tomato puree
-A tiny sprinkle of sugar
-Some salt and black pepper to season
-Half a teaspoon of dried coriander
-Half a teaspoon of garam masala
-If you like your sauce quite thin, add some water at this point. If you like it a bit thick and creamy, add a small pot of natural yoghurt/greek yoghurt/single cream.
-Cook the whole lot on a medium heat until the sauce is of a nice consistency and the meat and vegetables are cooked through.
-Serve with basmati rice or naan bread...yum yum
(This is based on enough for 2 people).
