Does anyone have any favorite vegetarian recipes I can try?

I recently decided to become of vegetarian for both moral and health reasons . But I know very few vegetarian recipes. I really want to stick with it this time. Does anyone have any favorite vegetarian recipes I can try? ThanksDoes anyone have any favorite vegetarian recipes I can try?
I've been a vegetarian for a medical reasons, since I was eight. It entirely depends on what you like. I grew up with mediterranean and Jewish foods, so I enjoy taboulleh and kugel, along with less ethnic foods like spaghetti squash, pasta, etc, etc.





Taboulleh receipe as follows:





2 cups fine or medium-grain bulgar


1 1/2 cups water


1 1/2 cups tomato juice (I found that I don't like this in my taboulleh)


3/4 cup lemon juice


1/2 cup virgin olive oil


The rest I tend to add to taste, these include: parsley, tomatoes, red pepper, green pepper, yellow pepper, scallions, mint, salt, black pepper and allspice.





Mix this all up and cover and refigerate over night.


It's a pretty open forum when it comes to what you put into taboulleh, so feel free to be creative.





Spaghetti squash is pretty good. Cut your squash in half lengthwise and bake in the oven at 375 for 30 to 40 minutes. When done, scrape out the insides. They should come away in strands, like spaghetti. Form there you can put pasta sauce on it and eat it like spaghetti too. It's sweeter, but its good.





A third recipe is this vegetable salad: Cut and peel potatoes into cubes of about one each and boil until soft. Boil also green beans, peas and onions. When finished combine the two in a bowl with mayonaise and vinegar to taste and let cool. It should come out similarly to a potatoe salad, but tastes much better.Does anyone have any favorite vegetarian recipes I can try?

I like my vegetarians sauteed with butter and rosemary and just a hint of dill. A good Merlot or Dornfelder works well as wine with the meal.
