I've googled it and searched a couple websites for a good peanut butter and chocolate chip cookie recipe, but I thought I would take advantage of this wonderful forum to see what all you lovely people had in your books and recipe bins. I used an allrecipes.com recipe last time I made peanut butter cookies and they were good, but they didn't have the texture that I like.
I like those cookies you buy in the package, break apart and bake and would like to be able to recreate them as best I can homemade. I don't want them to be crunchy, like the type you would dunk in milk, but I don't want them too soft either.
If you think you've got the recipe for me please share it! The one I choose to make will be awarded with a best answer after I make them Friday night (the 23rd) and conduct a taste test. :) Thanks!
Note: I've got two sticks of butter in the bowl softening as we speak and want to the recipe to yield about 4 dozen since I'm going to be sharing them with friends and family.Know any good peanut butter cookie recipes?
peanut butter cookies-
INGREDIENTS:
1/2 cup (1 stick) butter, softened
1/2 cup chunky or smooth peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
PREPARATION:
Preheat oven to 375掳.
Cream the butter, peanut butter and sugars until light. Add the egg and mix until fluffy.
Blend the flour, baking powder, soda and salt together well.
Add these dry ingredients to the butter mixture. Add the chocolate chips.
Drop cookie dough by teaspoonfuls onto lightly greased baking sheets. Bake for 10-12 minutes at 375掳.
peanut butter bar cookies-
These peanut butter fingers are topped with melted chocolate chips and a drizzling of peanut butter icing.
1/2 cup butter
1/2 cup firmly packed brown sugar
1/2 cup sugar
1 egg
1/3 cup peanut butter
1/2 teaspoon salt
1/2 teaspoon vanilla
1/4 teaspoon soda
1 cup flour
1 cup quick oats
1 cup semisweet or milk chocolate chips
1/2 cup powdered sugar
1/4 cup peanut butter
2 to 4 tablespoons milk
PREPARATION:
Cream together butter, sugar and brown sugar. Mix in the egg, peanut butter, salt, vanilla and soda until well blended. Stir in flour and oats. Mix all ingredients together well. Spread in a greased and floured 9x13-inch pan.
Bake at 350掳 for 20 to 25 minutes, or until lightly browned. Take care not to overcook. Melt chocolate chips and spread evenly over cookie mixture. Combine powdered sugar, peanut butter and milk until the consistency of thin icing. Drizzle over cookie mixture. Let cool and cut into 2- X 1-inch bars.Know any good peanut butter cookie recipes?

Ingredients:

1/2 cup brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup margarine softened
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions:
Mix sugars, peanut butter, shortening, margarine, and egg. Stir in remaining ingredients.
Cover and refrigerate at least 3 hours.
Heat oven to 375. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork dipped in flour. Bake until light brown, 9 to 10 minutes. Sprinkle with granulated sugar mixed with food coloring. Cool 2 minutes then remove from cookie sheet.

1/4c. brown sugar
1/4c white sugar
1 egg
1/2c peanut butter
1/4tsp baking soda
1/4tsp vanilla
1/2c flour
beat margarine, sugars well.
beat in the egg,peanut butter, baking soda and vanilla
add the flour
roll the dough into small tbsp balls and use a floured fork to make design.
cook for 10 minutes in a 350f oven

1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups all-purpose flour

DIRECTIONS:
Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.
Add flour, baking soda and salt with mixer. Chill dough 15 minutes in the refrigerator. Roll into balls by hand.
Place on sprayed cookie sheet and bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 7 to 10 minutes). Don't overcook. We store them in a plastic storage containers, and they stay soft!
