Avocado, Artichoke Hearts and Heart of Palm Salad served in Lettuce Wraps
1 (14-ounce) can small artichoke hearts in water, drained
1 (14-ounce) can hearts of palm, cut into medium chunks, drained
1/2 English cucumber, thinly sliced
1/2 small red onion, finely chopped
1 poblano pepper, seeded, ribbed, and finely chopped
1/2 bunch fresh cilantro, leaves coarsely chopped (about 1/4 cup)
2 avocados, cut in large chunks
3 tablespoons white vinegar
Salt and freshly ground black pepper
1 head butter lettuce, leaves whole, rinsed and dried
In a medium bowl, combine the artichoke hearts, hearts of palm, cucumber, onion, poblano, and cilantro. Add the avocado and drizzle with vinegar. Season with salt and pepper. Carefully mix, taking care not to break up the avocadoes.
To serve, spoon the salad into the butter lettuce cups.Any good artichoke heart OR avocado recipes for me?
This is my favorite dip. It is so good!
1 can (14 oz.) artichoke hearts, drained and chopped
1 cup Mayonnaise
1 cup grated Parmesan cheese (about 4 oz.)
1 clove garlic, minced (optional)
Preheat oven to 350掳.
In 1-quart casserole, combine all ingredients. Bake uncovered 25 minutes or until heated through. Serve with your favorite dippers.
As far as avocado. I love to slice them over a spinach salad. Which includes washed and dried baby spinach leaves, sliced carrots, chopped tomato, peeled and sliced avocado, cooked and crumbled bacon, and grilled chicken sliced. Use your favorite dressing, like a good vingeratte.
Or just make a great guacmole with chips. I use 3 to 4 avocados peeled and chopped, 1 small tomato chopped, half of a lime (juice only), dash of salt and pepper, dash of garlic powder, and 3 or 4 squirts of good hot sauce (more if you like it spicy). Mix and enjoy with tortilla chips.
Avocados are best just sliced and eaten: on sandwiches or in salads, or all by themselves:) Try them on BLT or turkey sandwiches!
