I need recipes for diet foods?

I am on a diet and am looking for differnet kind of healthy foods that i can eat. I am just eating chicken and putiing vegitables in it. I am also eating fruit and salads but it gets boring. Please give me the name of the dish ingrediants and how to prepare it. If you dont know how to prepare it I can look it up online.

Mediterranean Eggplant Casserole





2 tsp. olive oil


1 onion, halved and sliced


3 cloves garlic, minced


1 tsp. oregano, dried


1 1/2 tsp. salt


1/2 tsp. pepper


1 1/2 lbs. tomatoes, chopped


3 tbs. fresh basil, sliced


1 cup dry bread crumbs, seasoned


1/4 cup grated parmesan cheese, divided


3 egg whites, lightly beaten


1 cup mozzarella cheese, shredded


2 lg. or 2 1/2 lbs. eggplant, peeled and cut crosswise into 3/8'; thick slices





1. Prepare a cookie sheet with fat free cooking spray and set aside.





2. Mix bread crumbs with 2 tablespoons of parmesan cheese. Beat egg whites with 1/2 tsp. salt.





3. Dip eggplant slices in egg whites, coat with seasoned bread crumbs.





4. Place eggplant slices on prepared cookie sheet. You will have 2 different batches. Spray eggplant slices with cooking spray. Set aside.





5. In a nonstick skillet heat oil over medium heat, add onion and garlic. Cook until softened. Add oregano, 1 tsp. salt and pepper. Cook for one minute. Add tomatoes, increase heat to high and cook until thickened, about 10-12 minutes. Remove from heat and add basil.





6. Broil eggplant slices, 1 batch at a time for 3-5 minutes per side, until brown.





7. Preheat oven to 425 F. Layer eggplant slices in a 1 1/2 quart baking dish. Top with tomato mixture and sprinkle with mozzarella cheese and remaining parmesan cheese.





8. Bake uncovered until cheese is bubbly, 10-15 minutes.

Healthy Ground Beef Stroganoff





Serve hot over noodles or rice. You can also simmer in a Dutch oven for about 1 hour or bake at 350 degrees for 1 hour if you are short on time





2 lbs lean ground beef


2 medium onions, chopped


2 garlic cloves, minced


8 ounces fresh mushrooms, sliced


2 teaspoons low-sodium beef bouillon powder


1 cup water


1 1/2 cups plain low-fat yogurt


4 tablespoons flour


3 tablespoons tomato paste


1/2 teaspoon salt


1/4 teaspoon pepper





1. Brown meat in skillet; drain fat.


2. Add onions, garlic and mushrooms and saute until onion is golden- Place in crock pot.


3. Dissolve bouillon granules in water.


4. Mix together yogurt and flour.


5. Add bouillon, yogurt, tomato paste, salt and pepper to crock pot.


6. Cover and cook on low for 6 hours.
DIET APPLE PIE





Non Nutritive sweetener equivalent to 3/4 cup sugar, 3 tsp. Sweet and low


2 tbsp. flour


1/2 tbsp. cinnamon


Dash salt


3 c. apples, cored and peeled and sliced thin


2 tbsp. diet butter


2 pie crusts





Preheat oven to 400 degrees. Bake 50 minutes or until done. Combine sweetener, flour and spices and salt. Mix with apples. Line pie plate with crust fill with apples mixture dot with diet butter. Place to crust on pie and sprinkle with sugar substitute if desired.





DIET BANANA CREAM PIE





1 sm. pkg. vanilla cream pudding (diet)





Prepare and cool; set aside. 4 tsp. flour


Mix until doughy. Spread in sprayed 9 inch pie pan. Bake 20 minutes at 350 degrees. Cool and set aside. 3 pkgs. Equal





Mix and spread on cooled pie crust. Spread with pudding on top. Slice 2 bananas evenly over top. Top with diet topping or Cool Whip. Serves 4. Exchanges: 1 fruit; 1 protein; 1 milk; 12 optional calories plus whipped topping calories.








DIET SALAD





1 can diet pop, fruit flavored


3/4 env. plain gelatin





Sprinkle gelatin over cold pop. Heat until the gelatin dissolves. Pour into bowl and place in refrigerator until set. Also good with unsweetened fruit added. May be topped with diet whipped cream.





DIET VEGETABLE SOUP





1 lg. can V-8 juice


1 can water


1 pkg. frozen cauliflower


3 beef bouillon cubes


4 chicken bouillon cubes


2 cans French style green beans


1 sm. head cabbage, cut up


1 onion, chopped


3 ribs celery, cut up





Peel all ingredients in large pot. Let cook until vegetables are done. Any time through the day, eat a bowl of soup. You can eat as much as you want when on a diet.





DIET SUPER CHICKEN





4 whole chicken breasts, skinned and cut in half


1/2 tsp. salt


1/4 tsp. pepper


1/4 tsp. garlic powder


1/2 c. diet apricot preserves


1/2 c. low cal French dressing


2 tsp. diet apple jelly


1 tsp. dry chicken bouillon





Place chicken in a foil lined pan. Combine salt, pepper, garlic powder and sprinkle on chicken. Combine and brush remaining ingredients all over chicken. Bake at 350 degrees F. for 1 hour. Excellent for diabetics or people on diets.





DIET... ORANGE- PINEAPPLE ICE CREAM





3 c. artificial sweetener


1 (10 1/2 oz.) can diet mandarin orange slices


1 1/2 cans Pet milk or 1 qt. half %26amp; half


6 to 9 eggs


1 can diet crushed pineapple





Blend all ingredients together. Pour into freezer. Fill remainder of freezer with regular milk.

Have you used Splenda or other sweeteners in recipes?

Having a Mother with diabetes, I'm interested in making her some desserts without sugar. Are Splenda type sweeters a bunch of chemicals or what? Any great recipe suggestion/comments appreciated.Have you used Splenda or other sweeteners in recipes?
My fiance is borderline diabetic and has a horrible sweet tooth. I have been cooking with Splenda for over 2 years now.





What I like about Splenda is that you use the same amounts, unlike other sugar free sweeteners, if the recipe calls for 1 cup of sugar, you use 1 cup of Splenda. Splenda now has brown sugar as well. I have used it to make New York Style Cheese cake, and it came out perfectly.





You can take any regular sugar recipe and just substitute with Splenda, it cooks perfectly!





For recipes I suggest you go to www.recipezaar.com and look up recipes that are sugar free. Normal everyday people like you and me post recipes and then others bake them and rate them. I always try to use recipes that have 10 or more reviews and have never been let down. You can search for recipes by ingredients and enter Splenda as the ingredient.

I avoid ALL artificial items. Chemistry experiments were not meant to be eaten.





You might want to check out a health food store and look for things like brown rice syrup or stevia to use as a sweetener instead.

BRUSCHETTA


take slices of day old bread, and drizzle with olive oil. add chopped garlic to the tops. bake at a 375 oven until nice and brown. cover with diced tomatoes.





CAPRESE SALAD


slice up some cherry tomatoes, halves work well. cut fresh mozzarella into pieces that are about the same size. sprinkle with salt and pepper, and add a drizzle of olive oil. this is amazing.





NUTELLA SANDWICH


take two slices of italian country bread, and spread with nutella. put inside of a panini maker or on a grill, and grill until the bread is golden brown.





BRIE AND CHOCOLATE PANINO


with two slices of italian country bread, add a handful of chocolate chips to one slice. on the other, add a hearty spreading of brie. add some mint and basil to the middle. cook in a panini maker or on a grill until the cheese is melted.





SPICED MOZZARELLA BALLS


roll fresh mozzarella balls in crushed cloves, black pepper, sea salt, and garlic powder. slice and serve with your favorite crackers.





CROSTINI


take several pita breads or tortillas, and cut into cracker size pieces. drizzle with olive oil, and bake in a 375 degree oven until crisp. sprinkle with salt and pepper.





SIMPLE PASTA SALAD


take cooked rotini, and toss it with cherry tomatoes, fresh spinach leaves, and some lemon zest. add extra virgin olive oil and salt. serve cold.





FRICOS





shred some parmesan cheese. using a big spoon, place it onto a baking sheet lined with alminum foil. press down with a cup. bake in a 375 degree oven until golden and bubbly. immediately take out of oven, and sprinkle with pepper.





CROSTINI ALLA MARGEHRITA





take some crostini which you made earlier, and toss in a bowl with fresh mozzarella, basil, diced tomatoes, salt, and pepper. serve either cold or room temperature.

1 (9 oz.) box Ritz bits crackers


1/4 c. butter, melted


1 pkg. Zesty Italian salad dressing mix


1 tbsp. Worcestershire sauce


1/4 tsp. seasoned salt


Preheat oven to 250 degrees. Place crackers in a large shallow baking pan in a small bowl, combine butter, salad dressing mix, Worcestershire, and salt. Pour butter mixture over crackers, stir well. Bake 1 hour, stirring every 15 minutes. Pour onto waxed paper to cool. Store in airtight container. Yield: approximately 4 cups of snack mix.


























DIANE'S ITALIAN SNACK


1 env. Good Seasonings Italian dry dressing


1 (8 oz.) cream cheese


Cut cream cheese in half, longway. (So it looks like 2 sticks of butter). Roll in dressing mix to cover all sides. Let sit for a couple of hours in refrigerator. Serve with crackers. Enjoy!























ITALIAN - STYLE SNACK MIX


4 c. popcorn (popped in air popper)


2 c. bite-size shredded wheat squares


2 c. toasted oat cereal (like Cheerios)


3 tbsp. melted diet butter


3 tbsp. grated Parmesan cheese


1 tbsp. dry Italian salad dressing mix (no oil variety)


Preheat oven to 300 degrees. Melt butter. In large bowl, combine all ingredients, tossing thoroughly. Bake for 15 minutes. Contains 860 calories and 30% fat.























PIZZA DIPS


Savory, pizza flavored snacks are first formed into little balls, baked crisp, then served with a hot pizza flavored sauce as a dip. You can prepare the Pizza Dips ahead and reheat them before serving.


For 4 Dozen Snacks You Will Need:


1/2 lb. bulk breakfast sausage


2 c. all purpose flour


1/4 c. grated Parmesan cheese


2 tsp. mixed Italian dried herbs (basil, oregano, marjoram)


1 tsp. salt


2/3 c. vegetable oil


1/3 - 1/2 c. ice water


Hot pizza dipping sauce (recipe follows)


sliced tomatoes %26amp; celery sticks


Mint leaves for garnish


1. Brown meat in frying pan. Drain excess fat.


2. Combine flour, cheese, herbs and salt in mixing bowl. Cut in shortening until mixture resembles coarse crumbs.





3. Add sausage. Mix until evenly distributed. Sprinkle with ice water and stir until dough is just moist enough to handle.





4. Shape into 1'; balls. Place on ungreased cookie sheet. (This much can be done ahead if desired.)





5. Bake at 450 degrees for 10 to 12 minutes or until lightly browned. Serve hot with hot dipping sauce. Accompany with sliced tomato and celery sticks. Garnish with sprig of mint.















































CUCUMBER DELIGHTS


8 oz. cream cheese


1 pkg. Italian dry dressing (Good Seasons Brand)


Snack rye


Dillweed


Mix together cream cheese and dressing and spread on bread or snack rye. Place slice of cucumber on top and sprinkle dillweed on top of that.



































GARLIC %26amp; HERB POTATO SNACK


1 box (12 oz.) frozen French fried potatoes


2 tbsp. grated Parmesan cheese


2 cloves garlic, minced


1/4 tsp. Italian herbs


Dash ground red pepper


1 container (10 1/2 oz.) Spreadery Cheese Snack neufchatel cheese with garlic %26amp; herbs


Arrange potatoes on a baking sheet in one layer. Bake in a 450 degrees oven 5 minutes. Combine next 4 ingredients. Sprinkle over potatoes and toss. Bake 5 minutes or until crisp. Serve warm with Cheese Snack as dip. Serves 4. Preparation time: 5 minutes. Cooking time 12 minutes.






































HAM 'N CHEESE CRESCENT SNACK


8 oz. quick or Italian flavor crescent dinner rolls


1 tsp. prepared mustard


1/3 c. sliced green or ripe olives


4 1/2 oz. can deviled ham (use reg. ham)


1 c. (4 oz.) shredded Swiss or Cheddar cheese


1 egg, slightly beaten


1 tsp. sesame seed, if desired


Preheat oven to 375 degrees. On ungreased 15 x 10 inch jelly roll pan, separate crescent dough onto 2 large rectangles. Overlap long sides to form 13 x 7 inch rectangle, firmly press edges and perforations to seal.


In small bowl, combine mustard, olives and deviled ham. Spread ham filling lengthwise down center third of dough to within 1 inch of edges. Sprinkle with cheese. Make cuts 1 inch apart on each side of rectangle just to edge of filling.





Fold strips of dough at an angle halfway across filling, alternating from side to side. Brush with egg. Sprinkle with sesame seed. Bake 15 to 20 minutes until golden brown about 1 dozen snacks.

5 1/2 to 6 c. all-purpose flour


2 pkgs. active dry yeast


2 tsp. salt


2 c. warm water (115 to 120 degrees)


Cornmeal


1 slightly beaten egg white (optional)


1 tbsp. water (optional)


In large mixer bowl combine 2 cups of the flour, the yeast, and salt. Add 2 cups warm water. Beat at low speed of electric mixer for 1/2 minute, scraping bowl constantly. Beat 3 minutes at high speed. Stir in as much of the remaining flour as you can mix in with a spoon. Turn out onto lightly floured surface.


Knead in enough of the remaining flour to make a stiff dough that is smooth and elastic (8 to 10 minutes total). Shape into a ball. Place in lightly greased bowl, turning once to grease surface. Cover; let rise in warm pla

Ingredients


55g/2oz butter


170g/6oz demerara sugar


2 tbsp black treacle


1 tbsp golden syrup


2 eggs


200g/7oz self-raising flour


200g/7oz pitted dates


290ml/10fl oz boiling water


1 tbsp bicarbonate of soda


陆 tsp vanilla extract


For the sauce:


110ml/4fl oz double cream


55g/2oz butter, diced


55g/2oz dark muscovado sugar


2 tbsp black treacle


1 tbsp golden syrup


For the moulds:


30g/1oz soft butter


30g/1oz flour











Method


1. Butter the moulds and dust with flour and preheat oven 200C/400F/Gas 6.


2. Using a food processor cream the butter and sugar together.


Slowly add the golden syrup, treacle and eggs. Continue mixing until the mixture looks smooth, then turn down to a slow speed and add the flour. Mix until everything is well combined.


3. Add the boiling water to the dates and tip into a blender. Secure the lid firmly and blend to a pur茅e.


4. Add the bicarbonate of soda and vanilla.


5. Pour this into the batter while it is still hot and stir well.


6. Pour into the moulds and bake for 20-25 minutes until the tops are just firm to the touch.


7. Make the sauce: simply place all the ingredients in a pan, bring to the boil, stirring a few times and then remove from the heat. Put to one side until ready to use.

TOFFEE SAUCE:


1/2 cup unsalted butter


1/2 cup heavy cream

Preheat oven to 350 degrees. Butter a 10-inch round or square baking dish. Sift the flour and baking powder onto a sheet of waxed paper. Chop the dates fine. Place in a small bowl and add the boiling water and baking soda; set aside. In a bowl of electric mixer beat the butter and sugar until light and fluffy. Add the egg and vanilla; beat until blended. Gradually beat in the flour mixture. Add the date mixture to the batter and fold until blended with a rubber spatula. Pour into the prepared baking dish. Bake until pudding is set and firm on top, about 35 minutes. Remove from oven to a wire rack. Toffee Sauce: Combine the butter, heavy cream and brown sugar in a small heavy saucepan; heat to boiling, stirring constantly. Boil gently over medium low heat until mixture is thickened, about 8 minutes. Preheat broiler. Spoon about 1/3 cup of the sauce over the pudding. Spread evenly on top. Place pudding under the broiler until the topping is bubbly, about 1 minute. Serve immediately spooned into dessert bowls. Drizzle with toffee sauce and top with a spoonful of whipped cream.

QUESADILLAS





This is extremely easy to make, and good to make if you鈥檙e in a hurry to make something. It tastes yummy!





Tortillas


1 can of diced tomatoes, drained


1 can corn niblets, drained


1 onion, diced


Cheddar cheese, grated


Hot peppers


1 can of black beans, drained, rinsed and mashed





Put a tortilla down on a baking sheet. Put on the beans, top with tomatoes, corn, onion, hot pepper and cheese (or add your own favourite toppings). Bake at 350F for 5 min., when cheese is melted. Serve with salsa.
Grey Peas and Bacon





1 lb dried grey peas 1 large sliced onion


3 oz Pearl Barley Salt and Pepper


1 lb bacon





Soak the peas and pearl barley overnight and then place in a saucepan with the onion, previously browned bacon and salt and pepper. Cook slowly for three hours. (In our experience the bacon is chopped into small pieces before browning).

    Why not make cupcakes, use food coloring to make them different colors, and then decorate them with Easter-themed chocolate?

    Get some chocolate bunnies or eggs. I'd recommend getting the mini ones so it is not so expensive. Or you could get plastic easter eggs and fill them with a few little candies so the kids will have a surprise when they open it.

    I'm from the South, so my Mom taught me how to make a delicious homemade peach cobbler. Here's how:


    Serves 4





    11/2 cups of Self rising flour


    1 cup of milk


    1 tsp of vanilla extract


    1/2 tsp of cinnamon (ground)


    1 1/2 cups of sugar


    1 15 ounce can of peaches


    1/2 stick of butter -or- margarine (set aside)





    Mix all these ingredients together, and pour into a non-stick pan. Cut the margarine into tiny pieces on top of the batter, and bake for 30 minutes on 350 degrees.What's are some of your best dessert recipes??

    I just whip a packet of cream cheese with a pinch of gelatin (powder in water)...


    Mix brown sugar, milk, sour cream and whipping cream in another bowl and whip till it can hold its shape (soft peaks and all that...)...combine the two mixtures....put it in a big coffee mug and freeze overnight....top it with chocolate sauce and shavings...and you're done!!

    1 tsp. vanilla extract


    Whipped cream and raspberries, for garnish

    Finely crush 30 cookies and coarsely chop remaining cookies; set aside. Mix finely crushed cookie crumbs and margarine or butter in bowl. Press on bottom and 2 inches up side of 9-inch springform pan; set aside.





    Beat cream cheese and sugar in bowl with electric mixer at medium speed until creamy. Blend in eggs, sour cream and vanilla; fold in chopped cookies. Spread mixture into prepared crust. Bake at 350掳F for 55 to 60 minutes or until set. (If necessary to prevent top from overbrowning, tent with foil for the last 15 to 20 minutes of baking).





    Cool on wire rack at room temperature. Refrigerate at least 4 hours.





    Remove side from pan; garnish with whipped cream, raspberries and cookie halves to serve.

    Triple Chocolate Bundt Cake (always a big hit)





    1 (4 1/2 oz.) pkg. chocolate instant pudding mix


    1 (2 layer) pkg. chocolate cake mix


    1 (12 oz.) bag chocolate chips


    1 3/4 c. milk


    2 eggs





    Combine ingredients in bowl and mix by hand until well blended, about 2 minutes. Pour into greased and floured 12-cup bundt pan and bake at 350 degrees for 50-55 minutes or until cake springs back when touched. Cool in pan 15 minutes, invert onto plate. When fully cool, sprinkle with powdered sugar.





    I'm a big fan of dark chocolate, so I use dark chocolate chips.





    Also, I mix a small amount of cocoa powder in with the powdered sugar for dusting the cake when cooled.
    Take whole strawberries (washed without greens) and put them in a bowl. Add a bit of sugar to your liking. Next, take a knife and just start cutting from one side of the bowl to the other. This will start cubing the berries. After a few minutes you will have a lovely strawberry shortcake topping. This can then be used for lots of things. You could buy those little dessert cups (the strawberry shortcake type ones) or make busuits and do the shortcakes. Or, I like to make a yellow or white cake and just pour this on top.

    Cranberry Cocktail Meatballs


    A flavorful appetizer meatballs, baked then kept warm in the slow cooker. If you need something quicker, combine your own favorite frozen meatballs with the sauce ingredients, then cook on HIGH in the slow cooker for about 2 hours.


    INGREDIENTS:


    2 pounds ground beef


    1 cup corn flake crumbs


    2 eggs


    1/4 cup chopped, fresh parsley


    1/3 cup ketchup


    1/4 cup minced onions


    2 tablespoons soy sauce


    1/4 teaspoon garlic powder


    1/4 teaspoon pepper


    1 can (16 ounces) cranberry sauce, jellied or


    whole cranberry sauce


    12 ounces chili sauce


    1 tablespoon brown sugar, firmly packed


    2 teaspoons lemon juice


    PREPARATION:


    In a large bowl, combine ground beef, corn flake crumbs, parsley, eggs, ketchup, onion, soy sauce, garlic powder and pepper. Blend ingredients well and form into small balls, about 3/4-inch in diameter.





    Place in a casserole or baking pan. Heat oven to 300掳.


    While meatballs are cooking, combine cranberry sauce, chili sauce, brown sugar, and lemon juice in a saucepan. Cook, stirring, over medium heat until mixture is blended. Pour hot sauce over meatballs in casserole. Bake for about 45 minutes, depending on the size of the meatballs. Transfer to crockpot and keep on LOW for serving.

    This is probably the simplist thing ANYONE can do, but rocks as a super-bowl party dish.








    Just buy some frozen meatballs, and fill the crockpot with BBQ sauce, put meatballs in and there you go!
    You should try checking out the crockpot recipes on line..there are lots of websites with great entertaining ideas.
    Take some meat and roll it into a ball. Then cook it in mexican cheese.
    I don't have a recipe for the actual meatballs. But a co-worker of mine brings these in every food day. He swears by Cattleman's BBQ sauce. They always taste really good and I usually don't even like BBQ sauce.
    Real easy....a jar of chili sauce and a jar of grape jelly!!! and I buy pre-made meatblls. Super easy and really good.

    Stuffed Peppers





    INGREDIENTS


    1 cup water


    1/2 cup uncooked Arborio rice (normal rice if on budget)


    2 green bell peppers, halved and seeded


    1 tablespoon olive oil


    2 green onions, thinly sliced


    1 teaspoon dried basil


    1 teaspoon Italian seasoning


    1 teaspoon salt


    1 pinch ground black pepper


    1 tomato, diced


    1/2 cup crumbled feta cheese


    DIRECTIONS


    Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.


    In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and set aside.


    Place the peppers cut-side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.


    While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. Stir in the tomato, and cook for 5 minutes. Spoon in the cooked rice, and stir until heated through. Remove from heat, mix in the feta cheese, and spoon the mixture into the pepper halves.


    Return to the oven for 5 minutes. Serve immediately
































    Very Spicy Vegetarian Chili





    INGREDIENTS


    1 tablespoon olive oil


    1/2 medium onion, chopped


    2 bay leaves


    1 teaspoon ground cumin


    2 tablespoons dried oregano


    1 tablespoon salt


    2 stalks celery, chopped


    2 green bell peppers, chopped


    2 jalapeno peppers, chopped


    3 cloves garlic, chopped


    2 (4 ounce) cans chopped green chile peppers, drained


    2 (12 ounce) packages vegetarian burger crumbles


    3 (28 ounce) cans whole peeled tomatoes, crushed


    1/4 cup chili powder


    1 tablespoon ground black pepper


    1 (15 ounce) can kidney beans, drained


    1 (15 ounce) can garbanzo beans, drained


    1 (15 ounce) can black beans


    1 (15 ounce) can whole kernel corn


    DIRECTIONS


    Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.


    Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes.     i just got done with dinner and we had a veggie Shepard's pie and cornbread





    prepare 5 large potatoes in to mashed potatoes





    saute onions, carrots


    add broccoli and 3/4c of water, cover for 3-4 min


    add corn


    1c vegetable broth


    simmer





    add 2tbl flour


    1/2c milk (soy milk if you prefer)


    simmer, stirring constantly





    pour veggie mixture into baking dish


    spread mashed potatoes on top


    bake @ 400 for about 10min


    turn on broiler for a few more min until top browns a little

    Stuffed Peppers with White Wine Risotto





    A generous amount of white wine makes this aromatic entree festive enough for any special occasion.





    INGREDIENTS:


    4-6 red bell peppers


    2 tbsp olive oil + 1/4 cup


    1/2 tsp salt


    1/2 tsp garlic powder


    3 scallions


    4 cloves garlic


    3 cups vegetable broth


    1 cup white wine, separated + 1 tbsp


    1 cup Aborio rice


    1/2 cup sun-dried tomatoes (re-hydrate if necessary)


    1 portobello mushroom, halved and sliced


    1 tbsp margarine


    parmesan cheese (vegan or dairy, optional)


    PREPARATION:


    Slice tops off of peppers and scoop out seeds. Place in baking tray. Drizzle with 2 tbsp olive oil, garlic and salt and bake at 350 degrees for 15-20 minutes, or until just barely tender. Meanwhile, heat broth and 1/2 cup wine over low heat til hot, just before simmering.





    In a separate large skillet, sautee scallions, garlic cloves in 1/4 cup olive oil. Add rice and mushrooms until rice is toasted, but not burnt, stirring frequently. Add 1/2 cup white wine and simmer one more minute. Add 1/2 cup of the broth and wine mixture to rice. Allow to cook until the liquid is almost absorbed. Continue adding broth mixture 1/2 cup at a time until rice is cooked, about 30 minutes. Add 1 tbsp margarine and 1 tbsp wine just before done cooking. Stuff into peppers. Sprinkle the stuffed peppers with parmesan, if desired, and bake 10 more minutes.

    Salad Pizza





    Instead of serving pizza with a salad, combine the two for a light, hralthful one-dish meal-and wait for the bravos.





    1 pound pizza or bread dough, thawed if frozen


    2 tbsp yellow cornmeal


    1/4 cup grated Parmesan cheese


    2 tbsp balsamic vinegar


    1 tbsp Dijon mustard


    1 tsp light brown sugar


    1/4 tsp salt


    12 ounces plum tomatoes, cut into 1/2-inch wedges


    1 red onion, halved and thinly sliced


    2 cups shredded fat-free mozzarella (8 ounces)


    6 cups mixed salad greens, torn into bite-side pieces





    1. Preheat oven to 425 deg F. Roll dough out to 12-inch square on unfloured work surface. Sprinkle large baking sheet with cornmeal and place dough on top. Sprinkle Parmesan over dough. Bake until Parmesan starts to brown and pizza begins to puff, about 15 minutes.


    2. Meanwhile, in large mixing bowl, whisk together vinegar, mustard, brown sugar, and salt. Add tomatoes and onion, and toss to combine. Set aside.


    3. Top pizza with mozzarella and return to oven. Bake until cheese has melted and pizza bottom is crisp, about 5 minutes.


    4. Add salad greens to tomato mixture and toss to coat. Scatter salad over hot pizza and serve. 4 servings.





    Potato and Leek Gratin





    This recipe for gratin dauphinois uses leeks instead of onions and milk instead of cream. It can be left unattended in the oven and can kept warm for qoite a long time.





    11/2 lb(700g) King Edward or Desiree Potatoes


    1/4 pint (150ml) milk


    Small bunch thyme


    2 large leeks


    1 clove garlic


    4 oz(115g) Cheddar cheese, low-fat if desired


    1/2 oz(15g) butter


    1 tsp ground nutmeg


    Salt and freshly ground black pepper





    1. In a small pan, warm the milk over a very low heat with 2 sprige of the thyme. Do this while preparing the rest of the dish, but do not allow it to boil.


    2. Peel and very thinly slice the potatoes with a mandolin(frame with adjustable cutting blades) or a sharp knife. Put the potato slices into a colander and swill round under cold running water to wash away some of the starch. Drain the potatoes thoroughly. Trim and carefully wash the leeks, then slice them thinly like the potatoes. Crush the garlic clove and grate the Cheddar cheese.


    3. Grease a shallow gratin dish with the butter, and then arrange layers of potato and leek with a little of the garlic, nutmeg and seasoning. After removing the thyme, pour the milk over the vegetables and sprinkle with the grated cheese. Cook near the top of the preheated oven. Be careful not to over brown the potatoes on the top of the dise. Garnish with the remaining sprigs of thyme and serve immediately. serves 4-6.

    Risotto with crayfish and wild mushrooms





    Serves











    Preparation time less than 30 mins





    Cooking time 10 to 30 mins























    Ingredients


    15g/陆oz butter


    2 shallots, finely chopped


    1 clove garlic, finely chopped


    1 sprig thyme


    handful chanterelle mushrooms, cleaned and chopped


    250g/9oz risotto rice


    100ml/3陆fl oz dry white wine


    600ml/1 pint hot fish stock


    225g/8oz cooked crayfish tails


    2 tbsp mascarpone or double cream


    2 tbsp freshly grated parmesan


    salt and freshly ground black pepper


    2 tbsp chopped fresh flatleaf parsley











    Method


    1. In a medium saucepan, melt the butter and saut茅 the shallot and garlic for 5 minutes, or until softened.


    2. Add the thyme and mushrooms and gently fry for 2 minutes.


    3. Stir in the rice until coated in the fat. Pour in the wine and allow to bubble for a minute or so.


    4. Add a ladleful of the stock, bring to the boil, then reduce to a simmer, stirring constantly.


    5. Add another ladleful of stock and stir again until absorbed. Continue adding more stock in this way until the grains of rice are plump and creamy. It should take about 15-18 minutes.


    6. Fold in the crayfish tails for the last few minutes of cooking, followed by the mascarpone and parmesan. Season to taste with salt and freshly ground black pepper and stir through the parsley. Serve.Any nice recipes for crayfish please?

    BAR-B-QUE CRAWFISH





    2 to 3 lb. crawfish tails


    1/2 stick butter


    4 tbsp. olive oil


    2 tbsp. chili sauce


    2 tbsp. Worcestershire sauce


    1 tsp. liquid smoke


    Salt and pepper to taste


    1/2 lemon, thinly sliced


    2 cloves garlic, minced


    1 tsp. parsley, minced


    2 tbsp. lemon juice


    1 tsp. paprika


    1 tsp. oregano


    1 tsp. cayenne pepper


    1/2 tsp. Tabasco sauce





    Wash crawfish well and put in dish. Combine all ingredients in a saucepan. Over a low heat, simmer for 10 minutes, then pour over crawfish. When cooked, mix well, coating the crawfish and refrigerate for 2 to 3 hours, turning several times.


    Place 3/4 cup of water in a steamer. Insert the steamer plate and place the insert dish therein, cover and turn on. When the bell rings the crawfish are ready. When serving, use bread to ';sop'; up the sauce that will develop.

    (1 lb) bag peeled crayfish tails, not drained


    1/2 cup butter


    1 large onion, minced


    1 large bell pepper, minced


    2 stalks celery, minced


    1 tablespoon minced garlic


    1 teaspoon salt


    1/2 teaspoon black pepper


    1/2 teaspoon white pepper


    1/4 teaspoon ground cayenne pepper


    1 tablespoon flour


    1/2 cup water


    cooked rice








    1. In dutch oven melt butter over medium heat.


    2. Add onions, bell pepper, celery and garlic.


    3. Saute vegetables until soft, about 30 to 45 minutes.


    4. Add Crawfish tails and seasonings.


    5. Cover and simmer for 10 minutes.


    6. Mix flour in water, stirring to make a smooth liquid.


    7. Add to crawfish mixture, cover and simmer for 10 more minutes.


    8. Serve on hot rice.
    Dead easy, heat some good olive oil in a pan, saute onions and lots of garlic, throw in the crayfish with a little white wine, cover for 5/6 minutes by then the crayfish will be pink and cooked, remove crayfish and thicken sauce with double cream, tuck in.

    Pat chicken dry with paper towel. Heat 1 tablespoon of oil in a large frying pan on medium. Pan-fry chicken, turning once, for 1-2 minutes until golden on both sides. Remove and set aside.





    Heat remaining oil on low. Cook garlic until aromatic but not coloured. Return chicken to pan with olives and half of tomatoes. Season well with pepper. Simmer for 10 minutes, until chicken is cooked through. Add remaining tomatoes and cook for another 3 minutes.





    Arrange chicken on plates. Spoon over sauce. Serve with salad and crusty bread.








    Tip: for kids who don鈥檛 like olives, cook sauce without and scatter over adult servings later.

    Are you becoming a vegetarian or a vegan? They are two totally separate things! My friend takes vitamins (she is a vegan) but I don't know what kind. You should ALWAYS take vitamins anyway.

Some great cookbooks are Moosewood Cookbook by Katzen and any cookbook by Cresent Dragonwagon. Also, I have the book Almost Vegetarian (Shaw) and it ia great mix of recipies that can be converted to meat or veggie.

    1 (2 to 3 lb.) pork loin


    Salt


    Fresh ground pepper


    2 to 3 garlic cloves, mashed





    Massage pork loin with salt, pepper and garlic. Let rest for 1 hour at room temperature. Place in shallow pan. (Broiler pan works great.) Preheat oven to 375 degrees. Braise pork loin to 170 degrees internal temperature. Make enough; this goes great on cold sandwiches.

    * Cut the paner into cubes.

    * Heat 2 tbsp of the oil in a wok and stir fry the onions in it over high heat for half a minute.

    1 lb spaghetti, dry (try spinach or whole wheat)


    1 lb shrimp (cooked or frozen)


    1 - 28 oz can stewed tomatoes


    1 medium onion, sliced


    2 cups broccoli florets (fresh or frozen)


    2 cloves garlic, finely chopped


    2 Tbsp olive oil


    1 tsp dried oregano


    1 tsp dried basil


    1 tsp crushed red pepper


    salt and pepper to taste





    Boil water in a large pot and cook noodles as directed.





    While preparing pasta, warm oil in a large skillet over medium heat and brown onions, just until they begin to caramelize. Next add garlic, tomatoes, broccoli and shrimp (if using frozen shrimp run under tap water until defrosted before adding to skillet).





    Cover and simmer over low-medium heat for 10-15 minutes or until broccoli is fork tender. (If using cooked shrimp add during the last 2 minutes of cooking just to warm them through; stir occasionally).





    Drain cooked noodles, combine with contents of skillet and add oregano, basil, crushed red pepper, salt %26amp; pepper. Toss well, taste and adjust seasonings. Top with grated Romano or parmesan cheese before serving.











    Tips/Hints: If you're short on time, steam broccoli in the microwave to soften before adding to the sauce and drain some of the tomato juice to decrease the time it takes to reduce. Get creative by adding any of your favorite fresh, frozen or leftover veggies like mushrooms, bell peppers, asparagus or zucchini.

    Peanut butter on crackers, wheat bread or bananas is a healthy snack. If you use bread, cut it into shapes with a cookie cutter. If you waste a little bread it is worth it to get the food into him. Animal shaped snack crackers are good too.





    Fruit slices of any kind are great and the little individual fruit cups make it seem like a snack his size. Applesauce is a near-universal favorite. Pudding in little cups is good too - a serving of dairy and eggs. If you make it yourself, get some cute little dishes to put it in.





    Mild cheddar or american cheese in little cubes make a great snack.





    My son loved yogurt. I started him off with yoplait vanilla custard style then custard style fruit flavors then the yogurt with bits of fruit in it. He ate it as if it was ice cream.





    Some kids will eat raw carrots and celery if you make it bite size for them. Try letting him dip it in peanut butter or a little ranch dip.





    For meals, most every kid likes chicken nuggets or fish sticks. Search foodtv.com. I know they have a baked chicken finger recipe that is pretty kid friendly and I'll bet you could find a similar fish recipe there too. My son loved - and still loves - pizza and it is great for a meal or snack. Grilled/toasted cheese sandwiches are good too.

    I work at a daycare and we make things like apple slice smiles. Slice apples and then put peanut butter between them kinda like a smile then use marshmellows as the teeth. Also i read some where that you can blend carrots and other vegetables together and add it into foods like mac and cheese so your son will still eat vegetables and never know it.

    You can make almost ANY food red if you add enough red food coloring! :-) Pasta takes red pretty well, as do potatoes and caulflower. A lot of desserts, of course, can be red (or made to be red).





    I'd make a pasta salad with red pasta, cherry tomatoes, and red peppers with italian dressing or something.... or the red mashed potatoes (my kids LOVE that!).

    Ingredients





    pizza base


    2 tbs sundried tomato paste


    1 tin tomatoes


    mixed herbs


    1 onion


    1 red pepper


    ground black pepper


    vegan parmazan





    Spread the tomato paste onto the base and then drain the tin of tomatoes and add the chunks onto the base. Sprinkle on the herbs and then cover with the finely chopped onion (already partly cooked) and the slices of red pepper.





    Cook in the oven on gas mark 5 for 20 mins (straight on the shelf). Take out and sprinkle on ground black pepper and vegan parmazan cheese.

    Meat and Sauce





    2 pounds lean ground beef


    3 pounds London broil, fine cubed


    2 Bermuda onions, diced


    1 purple onion, diced


    1 green pepper, diced


    1 sweet red pepper, diced


    1 yellow or orange sweet pepper, diced


    4 Anaheim chilies, roasted, diced


    2 cloves garlic, minced


    2 Jalapeéño chilies


    2 yellow chilies


    1 red chili


    1 32-ounce can diced tomatoes


    1 32-ounce can tomato sauce


    Chili powder to taste


    1 teaspoon ground black pepper


    2 tablespoons vegetable oil


    Beans





    1 pound dried pinto beans


    1 14-ounce can tomato sauce


    2 tablespoons chili powder


    1 teaspoon cumin


    2 7-ounce cans condensed beef broth


    1/2 teaspoon allspice


    1 teaspoon onion powder





    Makes 15 Servings





    Inspect and cull dried beans. Remove any defective beans and foreigh matter. Cover with cool water and soak overnight. Drain.


    Place beans in a large pot. Add cans of beef broth, 14-ounce can of tomato sauce and enough water to cover by 1/2-inch. Add chili powder, cumin, allspice and onion powder. Bring to a boil while stirring. reduce heat and simmer, stirring occasionally, until beans are tender (about 1 hour). Allow to cool and place in covered bowl in the refriogerator overnight.


    Substitution: Six large cans (30-ounce) of Hunt's Chili Beans can be substituted. Open the cans and pour the beans into a screen colander to drain the packing sauce.


    Roast Anaheim chilies: Turn range burner on high. Place chilies directly over the fire. have tongs ready to turn chilies. When the skin chars and turns black, turn chilies. The kitchen will fill with the wonderful aroma of roasting chilies and you will seemingly transported to the kitchen of a hacienda. When all the skin has blackened, remove from fire. After chilies have cooled, rub under running water to remove blackened outer skin. Trin top and bottom, slice open and remove seeds and membrane. Dice and set aside.


    Substitution: One 7-ounce can of Ortega diced green chilies can be substituted but you will miss the aromatic experience of roasting your own chilies.


    Dice onions and sweet peppers, mince garlic cloves. To prepare the chili peppers, trim off stem ends and slice peppers lengthwise. This will expose the inside of the chili and the seeds and membrane which has most of the heat of the chili. Remove the seeds and membrane and discard. We are using the chilies for the flavor and will be later adding chili powder to control the pungency of the dish. Finely dice the chilies. Note:If you are sensitive to capsicum, the ';fire'; element in chili, wear rubber gloves when handling the chilies and be careful not to touch your face or eyes. Heat frying pan, add oil and diced vegetables and chilies. Sauté until onions are transparent. Remove vegetables and set aside.


    Add ground meat and cook until no longer pink. While cooking, break ground meat into fine bits. Drain off excess fat. Remove ground meat and set aside. Add cubed London broil and cook until just done. Return ground meat and sauted vegetables to the pan. Add diced Anaheim chilies, spices, tomato sauce and diced tomatoes. Mix well and simmer over low heat.


    The chili peppers ahve cooked a minimum time, just long enough to flavoe the oil. From this point on, the longer the chilies cook, the less spice heat they will have. After tasting, we will add chili powder in incriments to acheive the desired pungency.


    With a slotted spoon to drain off cooking liquid, add the cooked beans to the chili and meat mixture. Bring to a simmer and cook for 10 minutes to meld the flavors. Taste and adjust the spices to your personal taste. Simmer an additional 10 minutes.


    The beans have a deep beefy and chili flavor. The chili with its tomato and combination of ground and cubed beef make a rich beefy tomato sauce to carry the flavors of the onions, sweet and hot peppers. Depending on my mood, I sometiomes like shredded cheddar chees sprinkled over the top as a garnish and sometimes I like a big handful of diced Bermuda onions sprinkled over a big steaming bowl of chili. Sometimes I have both the onions and the cheese.





    The chili is rich and full flavored and makes a wonderful main dish. However, ladled over an open-faced wiener and bun, a new meaning is given to the term chili dog and chili burgers are simply out-of-this-world.Any great recipes for a spicy red chili?
    Mad Hatter Chili





    2 pounds chuck roast (½'; - ¾'; cubes)


    1 ½ pounds course ground chuck


    6 slices thick-cut smoked bacon (coarsely chopped)


    2 tablespoons cooking oil (optional)


    2 large white onions (coarsely chopped)


    2 cloves garlic (pressed or finely chopped)


    4 large stalks celery (coarsely chopped)


    5 dried habañero peppers


    4 dried ancho peppers


    2 cups water


    6 fresh hot peppers (mixed variety, include 2 habañeros – de-seeded and coarsely chopped)


    1 14oz. can crushed tomatoes


    1 14oz. can petite diced tomatoes (drained)


    2 tablespoons cumin


    1 tablespoon oregano


    ½ teaspoon salt





    Directions


    Boil water. Place dried peppers in a bowl, add boiling water, and cover. Let sit about 10 minutes. Remove and de-seed peppers. Strain water to remove seeds.


    Place water and seeded dried peppers in a pot over medium high heat, cook until half of the water is reduced, about 30 minutes.


    Place fresh peppers in food processor along with reduced dried pepper mixture and pulse to make a sauce with a consistency a bit like ketchup. Add additional water if needed. This will result in about 2 cups of “chili sauce.”


    Brown bacon, onions and garlic in large stew pot over high heat. Add cooking oil if needed. Once bacon is browned and onions “wet” add chuck roast and ground chuck and cook until browned, stirring occasionally. Drain.


    Add chili sauce and celery to meat mixture. Stir well. Cook over medium-low heat for 1 hour.


    Add crushed tomatoes, diced tomatoes, cumin, oregano and salt. Cook over medium-low heat for an additional 1 hour. Be careful not to cook off all the liquid.


    Serve with your favorite toppings.
    1/2 Cup butter


    4 lbs Top Sirloin


    3 green peppers


    3 large white onions


    6 garlic cloves


    1/2 cup parsley


    3 (1 pound) cans of tomatoes


    1/4 cup chili powder


    1 Tablespoon of salt


    1 1/2 teaspoon of cumin


    1 1/2 teaspoon black pepper


    1/2 oz of tabasco


    1 1/2 teaspoon cayenne pepper

















    Prepare Steak into 1/2 inch cubes.


    Dice all of the ingredients.





    Brown meat in butter, olive oil with the onions, chili powder and dash of Tabasco


    Pour 1/3c Cup off to saute peppers, garlic and parsley in a skillet.


    Add meat to pot.


    Stir in everything else


    Simmer 1 hour covered - stir


    Simmer 1/2 hour uncovered








    Be prepared to spend about five to six hours in preparing and cooking. Try to dice up everything pretty fine. The White Horse Spicy Chili Recipe is by far one of the best spicy chili recipies out there.





    In fact it has won a couple chili cookoff contests. We have seen and tried some different variations of the chili over time, but this original recipe seems to be the best.
    3 lbs lean beef


    1/8 pound rendered beef kidney suet (if you want to go for it)


    1 tsp each oregano, cumin powder, salt, cayenne pepper, and Tabasco


    3 tbsp chile powder (optional)


    4 hot chile peppers


    At least two chopped cloves of garlic


    2 tsp masa harina, cornmeal, or flour (optional)





    Sear beef in a 4qt+ Dutch oven or skillet. You may need a little oil to prevent the meat from sticking. When the meat is all gray, add suet and chile peppers and about two inches of liquid (you can use water, I use beer). Simmer for 30 min. Add spices and garlic, bring to boil, lower heat and simmer for 45 minutes. Add more liquid only to keep the mix from burning. Skim off as much grease as you can, and add masa harina. Simmer for another 30 minutes. Taste and adjust spices if necessary.





    WARNING: this is spicy chili, so leave out some of the spicy stuff in the beginning if you have a tender tongue. At this point, I refrigerate the chili overnight which allows the chili to mellow and you can skim off all the grease.

    4 鈥?6 Chilean Seabass Fillets


    4 cloves garlic, chopped


    1 tsp oregano, dried


    1 tsp basil, dried


    2 tsp parsley, fresh


    1 cup black olives, pitted and chopped

    陆 cup dry white wine, or vegetable stock

    1. Combine garlic, oregano, basil, parsley and olives. Season to taste with salt and pepper.








    2. Heat olive oil in 13x9 inch baking dish at 425掳F for about 5 minutes. Evenly spread olive mixture over bottom of baking dish. Carefully place fillets on top and pour white wine over top of fillets.

    Ingredients :





    Marinade/sauce


    2 cup Oolong tea, brewed (or water)


    2/3 cup soy sauce


    3/4 cup light brown sugar


    1 tsp minced fresh ginger


    1 tsp minced fresh garlic





    2 1/2 lb sea bass fillets





    Optional Garnish


    6 x handfuls fresh spinach


    1/2 tsp minced fresh garlic


    1 x 5.5-ounce can whole baby sweet corn,





    1. Make your sauce and marinade by combining the five ingredients in a medium saucepan over medium heat. Bring to a boil then reduce heat and simmer for 2 minutes. Cool uncovered, then strain out the ginger and garlic.





    2. Put your sea bass fillets in a storage bag or a covered container with 2 cups of the marinade. Let the fish have a nice soak in the marinade for 5 to 6 hours in the fridge. If the sauce doesn't completely cover the fish, be sure to turn the fillets a couple hours in so that all sides get marinated.





    3. When you are ready to prepare the fish, preheat your oven to 425 degrees.





    4. Arrange the fillets on a foil-covered cooking sheet. Bake the fish for 22 minutes or until the edges of the fillets are starting to turn brown. Crank the oven up to a high broil and broil fish for 2 to 4 minutes or until you get some dark patches around the edge of the fillets. Just don't let them burn.





    5. As your fish is baking, heat up a wok or large skillet with one tablespoon of vegetable oil over medium heat. Add the spinach, garlic, and baby sweet corn, and a dash of salt and pepper to the pan. Saute the veggies just until the spinach is wilted, then arrange half of the spinach and corn on each of two plates.





    6. When the sea bass is done broiling, use a spatula to carefully lay each fillet on the bed of spinach and baby corn. Split the remaining sauce and pour it over each of the fillets before serving.

The time depends on thickness of the fish, which can vary. Serve as is or with Sherry Cream Sauce, Corn Salsa or Artichoke Salsa, or other sauce.

    Fried Rice


    for each serving saute 1 to 2 cups vegetables (onion, celery, bell pepper, carrots, broccoli, anything) Stir in about 2/3 cup COOKED rice and season to taste with soy sauce, stir fry sauce or anything like that. In a small bowl beat one egg for each serving with a little cold water - push veg/rice mixture to one side of pan and pour in egg. When it starts cooking mix it with veg/rice mixture. Can add cooked meat (leftovers or salad shrimp) if desired.





    Chicken Strips


    Cut boneless chicken breast meat into bite size chunks or strips. Shake in mixture of flour and seasoning of choice (Cajun, Barbecue, Carri bean Jerk, etc) Film skillet with oil - heat. Cook and stir chicken until done - about 12 to 20 minutes depending on size of pieces. Serve with dipping sauce if desired.
    Rice Pudding





    3 cups whole milk


    1 can sweetened condensed milk


    2 teaspoons vanilla


    1/4 teaspoon salt


    2 cinnamon sticks


    1/2 cup raisins, soaked in warm water to soften


    1 cup rice, short or medium grain





    Bring milk to a simmer. Stir in rice, add in cinnamon sticks and simmer until rice is softened, about 15-20 minutes. Remove cinnamon sticks and stir in remaining ingredients. Bring to a slight simmer and cook for an additional 20 minutes or until almost all of the liquid is absorbed and rice has a pudding-like consistency.

    Moroccan Salmon Cakes with Garlic Mayonnaise





    GARLIC MAYONNAISE:


    1/2 cup mayonnaise


    1 clove garlic, crushed


    1/8 teaspoon paprika





    SALMON CAKES:


    1/2 cup couscous


    2/3 cup orange juice


    1 (14.75 ounce) can red salmon, drained


    1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry


    2 egg yolks, beaten


    2 cloves garlic, crushed


    1 teaspoon ground cumin


    1/2 teaspoon ground black pepper


    1/2 teaspoon salt


    3 tablespoons olive oil





    In a small stainless steel or glass bowl, stir together mayonnaise, garlic, and paprika. Set aside.


    Prepare couscous according to package directions using the 2/3 cup of orange juice in place of water.


    In a mixing bowl, combine the cooked couscous, red salmon, drained spinach, egg yolks, garlic, cumin, black pepper, and salt. Form into patties.


    In a large skillet over medium heat, heat the olive oil and fry patties until golden brown turning once, about 8 to 10 minutes. Serve with garlic mayonnaise.

    Fragrant Moroccan Beef, Date, Honey %26amp; Prune Tagine-Crock Pot





    3 lbs organic beef, trimmed of fat %26amp; cubed


    1 tablespoon olive oil


    1 lb onions, peeled %26amp; quartered


    4-6 garlic cloves, peeled %26amp; chopped finely


    1 lb carrots, peeled %26amp; cut into chunks


    9 ounces canned tomatoes


    4 ounces dates, pitted but kept whole


    6 ounces prunes, pitted but kept whole


    2 tablespoons honey


    1/2 pint beef stock


    1 cinnamon stick


    6 teaspoons ras el hanout spice mix or 2 teaspoons cumin powder


    2 teaspoons coriander powder


    1 teaspoon ginger


    1 teaspoon turmeric


    salt %26amp; pepper


    2 ounces toasted sliced almonds


    2 tablespoons fresh coriander(cilantro), chopped





    Par-boil the carrots in boiling water for about 3 -5 minutes.


    Preheat the electric Tagine or crock pot to High.


    Heat up half of the olive oil in a large frying pan and quickly brown the onion quarters over a fairly high heat until charred %26amp; coloured well. Tip them into the crock pot.


    Add the chopped garlic %26amp; par-boiled carrots to the onions in the crock pot.


    Make up 1/2 pint of stock with a beef stock cube. Add the honey to the the stock %26amp; ALL the dried spices. Tip the honey %26amp; spiced stock into the crock pot %26amp; mix well. Add the cinnamon stick.


    Add the tinned tomatoes, dates %26amp; prunes to the crock pot - mix well.


    Heat up the remaining olive oil and brown the beef cubes in small batches to sear %26amp; seal them. As you finish browning them, add the beef to the crock pot.


    When you have finished browning all the beef, give the whole mixture a good stir %26amp; season with salt %26amp; pepper.


    Cook on high for between 6 %26amp; 10 hours depending on your crock pot's wattage %26amp; settings.


    Serve the beef tagine with fluffy couscous and garnish with the chopped fresh coriander %26amp; toasted flaked almonds. It also works well with rice too.


    P.S. Watch out for the cinnamon stick! We sometimes award the lucky winner of the cinnamon stick with an extra glass of wine!


    P.P.S. You can use dates %26amp; prunes which have not been pitted, they do tend to hold their shape better too, just warn your guests that they must look out for the stones!

Go to a search engine like google or yahoo and type in beef recipe or egg recipe or something like that and you will come up with lots of things.

    Here is an interesting recipe that my aunt always made, And simple too, Called Gound beef and spaghetti cassorole, Its different, You will need 1 can of Franco american, spahetti, 1 can of tomato juice, 1 pound of ground meat, 1 diced green pepper and 1 diced onion, bread crumbs, First brown ground beef in skillet, as you are browing, turn down the heat, to low, simmer, cut up your onion and pepper, And put those in the groundbeef, Add the tomato juice all in it, and simmer, then after 20 minutes or so, Add the can of Spaghetti, When thats done, put into a little glass cassrole dish, and cover with bread crumbs on top, put in oven for only about 20 minutes on 200 degrees, and you have a meal with a nice salad on the side, If you have kids they will love it
