STEAKS + COGNAC %26amp; MUSHROOMS SAUCE :


4 steaks


butter


cognac


mushrooms (like morels or a blend of wild)


double cream or cr猫me fra卯che


salt %26amp; pepper





In a pan, cook the steaks in butter, salt %26amp; pepper.


When they're at mid cooking, add the mushrooms.


Turn up the heat to the max, pour some cognac and light the fire.


Stir and turn the steaks. When fire is off, add the cream. They're ready





You can do the same, but instead, don't use mushrooms at all and


do a sauce with cream and blue cheese, salt and pepper on the side.


Still use the cognac and the flamb茅 process with the steaks,


but pour the sauce indivually in the plate, not in the pan





FLANK STEAK, SHALLOTS %26amp; VINEGAR :


1 big flank steak (or skirt steak)


tons of sliced shallots


1 1/2 glass of vinegar


butter


salt %26amp; pepper





In a pan, put some butter, then when melted, add the shallots, a little salt %26amp; pepper and


when golden, take them out and put the steak in the pan, salt %26amp; pepper again.


Cook on medium heat. When golden on both size, add the shallots and the vinegar and


let it reduced a little. When you have an homogeneous sauce, it's done.


Serve with a gratin, boiled potatoes, or fresh pasta





SHRIMPS WHISKEY (or scallops):


Shrimps or scallops

a glass of whiskey or cognac (whiskey is better)


salt %26amp; pepper


butter





Put butter in a pan and when melted, add the peeled shrimps (you can leave the skin,


but it's messier to eat), salt %26amp; pepper.


Cook on medium heat.


When starting to turn pink, turn the heat to the max, pour the alcohol and light a fire with


a match (careful the eyebrows ;-)). Then add the cream


Serve over white rice (better) or fresh pasta





BELGIUM ENDIVES GRATIN :


6 endives (not too big)


9 slices of regular cooked ham


Gruy猫re cheese (in every supermarket)


30 grams of butter


30 grams of flour


1/2 liter of milk


a pinch of nutmeg


salt %26amp; pepper





Boil or steam the endives a little first, then drain water.


In a pot make a sauce : put the butter and when melted ad the flour, stir to mix it well.


When golden a little, add the milk and use a whisk to mix. Add the salt, pepper and nutmeg.


Stir continuously with a wooden spoon until the sauce is thick, it takes a little time.


In 1/2 slice of ham, put a little bit of shredded gruy猫re, wrap the endives


one by one (each must completly wrapped).


Butter an oven dish (not too much), pour a little bit of the sauce to just cover


the bottom, lay the endives on, pour the rest of the sauce, sprinkle with shredded gruy猫re gruy猫re.


Baked in the oven at 380掳 until the sauce is bubbling and the cheese is well gold





LEEKS GRATIN :





For 6 leeks :


Clean and boil the leeks for about 8 minutes.





On the side, make a sauce like this : 30 grams of flour


30 grams of butter


salt %26amp; pepper


a touch of nutmeg


1/2 liter of whole milk





In a pot, melt the butter, add the flour and when golden a little,


add the milk, salt, pepper and nutmeg.


With a wisk, mix it all. Then use a wooden spoon until the sauce is thick.


It takes a little while, but don't stop stiring.


Put a little of the sauce in the an long oven dish to cover the bottom,


then lay the leeks and


pour the rest of the sauce all over.


Add the shredded gruy猫re on top (trust me, this cheese is the best


if you need melted cheese, and you can find it in every supermarkets),


put in the oven until


the cheese is golden, checking on the leeks, they can't be too cooked.





You can do the same gratin with :


-Big macaroni (again boil the pasta first, just that when keeping


on cooking in the oven they won't be over cooked, put in oven dish, pour sauce,


gruy猫re on top, oven at 380掳)


- cauliflower





VEGETABLES MACEDOINE :


A bag of frozen peas (or fresh peas)


1/2 a bag of baby carrots (fresh)


2-3 white potatoes (fresh)


2 onions


1 pack of salted pork (diced, without the white fat)


Butter





In a pot, put the butter, the sliced onions and the diced pork.


Add the frozen peas and bay leaves. About 10 minutes after, the diced potatoes,


and 5 minutes after the carots.


Cook until the vegetable are cook the way you like

Yes I can give you one that I absolutely love. Go to Trader Joe's and buy an Empire Chicken... and put it in a pot {covered) along with mangoe juice...about one cup...add lite soy sauce...as it is better for you and not so strong tasting as the regular...add the soy sauce also into the pan along with mangoe juice...you can get mangoe juice also at trader joes or probably any supermarket for that matter. and then cover with montreal steak seasoning and WOW is this ever fluffy and wonderful tasting chicken...I mean unbelievable..... cook chicken at like 350 for like one and half hr. the chicken is just a small 2 or three pounder. good luck wwe love this empire chicken the best ever... maureen
Frittata Vongole








Ingredients





10 Eggs


3/4 cup(s) Shredded Fontina cheese


1 cup(s) freshly grated Pecconrino Romano cheese


3/4 cup(s) Heavy cream


2 cup(s) Red-skinned, diced potatoes, cooked


1 cup(s) Chopped clam meat


2 Tbsp Fresh parsley, chopped


4 Tbsp Olive oil


1 tsp Salt


Fresh groud pepper to taste


Freshly grated Peccorino Romano cheese for garnish





Procedures





Pre-heat oven to 350 degrees F.





In a large mixing bowl, beat the eggs and stir in all the ingredients, except the olive oil.





Heat the oil in a large skillet and pour in the egg mixture.





With a fork or spatula, push the edges of the frittata toward the center until most of the egg batter is set.





Place the skillet in the pre-heated oven and bake for 20-25 minutes until firm.





Cool 5 minutes before unmolding.





Serve from skillet or unmold, by running a spatula under the frittata and slide onto a serving platter.





Garnish with Peccorino Romano cheese.

Ugly Duckling Pudding Cake





1 pkg. yellow cake mix


1 pkg. lemon instant pudding


1 16 oz. can fruit cocktail with juice


1 cup shredded coconut


4 eggs


1/4 cup oil


1/2 cup brown sugar


1/2 cup chopped nuts





Blend all ingredients except brown sugar and nuts. Beat 4 minutes at medium speed.


Pour into a greased and floured 13 x 9 inch pan. Sprinkle with brown sugar and nuts.


Bake at 325 for 45 minutes or until cake springs back when lightly pressed and pulls


away from sides. Cool 15 minutes. Spoon hot glaze over warm cake.





Butter Glaze





1/2 cup butter or margarine


1/2 cup sugar


1/2 cup evaporated milk


1 1/3 cup shredded coconut





Combine margarine, evaporated milk and sugar in a saucepan. Heat on LOW until it is


all melted and well combined. Stir in coconut.
HOpefully you have a slow cooker/crock pot...

put either pork chops or chicken(any -chicken legs, or thighs or breasts) ontop of the carrots and onions


pour some bbq sauce ontop


1 cup of water


put lid on , turn dial to low and walk away for 5-6hrs*


make some 5min rice to go with the meal

Portobello Pizza Con Ricotta





2 Portobello Mushrooms


录 Cup Nonfat Ricotta Cheese


4 Slices Tomato or 录 Cup Canned Crush Tomatoes


2 Garlic Cloves, Minced


6 Tablespoons Shredded Low Fat Mozzarella Cheese


2 Tablespoon Chopped Fresh Basil


Pinch of Salt


Freshly Ground Black Pepper





Preheat oven to 375. Clean the mushrooms and remove the stems. Place mushrooms top down on a nonstick baking sheet and spread ricotta across each mushroom. Add the tomatoes and garlic, then top with mozzarella and basil. Bake for 10 minutes or until the cheese is slightly browned. Season with salt and black pepper. Serves 1.

Semolina Cake





2 cups flour


3 1/2 teas baking powder


1/4 teas salt


6 separated eggs


1.5 C sugar


1 1/2 C melted butter


1 grated orange rind


1 C orange juice


1 C Semolina


1/3 C blanched Almonds





Syrup


3 C sugar


2 C water


2 tabs sweet red wine





Sift flour, baking powder and salt. Beat egg whites until firm. Gradually beat in 1/2 cup of the sugar. Continue beating until very stiff and glossy. Set aside. Beat egg yolks, remaining sugar, and butter . Add orange rind. Add dry ingredients with orange juice and semolina. Fold in meringue. Turn into greased pan and sprinkle with almonds. Bake in moderate oven for 40 minutes. Cool.





Boil sugar and water for 3 minutes. Add wine. Pour syrup over cake. Cool and cut into your favorite shape

Rice Pudding - Sutlac





6 cups of milk,


1 cup of sugar,


1/2 cup rice,


1 tablespoon of rice flour or corn starch,


3 - 4 teaspoons of vanilla extract,





Wash the rice.Bring 3 cups of water to boil and add rice to water, when rice is cooked, drain it. Place rice and milk on heat when mixture begins to boil add sugar and stir slightly turn the heat down. Simmer for about 10 minutes. Make a paste of the rice flour with a little amount of water and stir into milk mixture and continue stirring.Simmer some more.Turn off heat and add vanilla extract. Pour pudding in individual bowls and let cool. Sprinkle with cinamon. Serve cold.
Ghormeh Sabzi Stew





Material for 6 people:





Vegetables: leek, Parsley, Spinach (a little), Fenugreek (a little). 1.5 kg


Corn oil as needed


Kidney bean 1/3 measure


Onion 1


Pure meat 500 gr


Dried lemon 5


Lime powder 陆 tea spoon


Salt %26amp; pepper as needed





Recipe:





Wash the vegetables, make them dry %26amp; chop up. Fry the vegetables with oil (not too much or it will make the stew too dark). Kidney beans must be marinade in water and a little salt from the night before. Chop up the onion and fry it in oil till the color changes to gold. Cut the meat to 4 cm pieces and fry with the onion. Add the beans to the meat and onion and add 6 measures water to them and heat them slightly till the meat gets medium rare. Make holes on dried lemons with a fork and add them together with the vegetables to the stew. Put the cap and let the stew to cook completely. Add salt, pepper and lime powder when the cooking process is about to finish.
Scrunchy Sweet and Sour Chicken - serves 4





Preparation - 20 minutes, Cooking time - 15 minutes





2 egg yolks


2 tbsp cornstarch


salt and ground black pepper


4 skinless, boneless chicken breast halves, cubed


vegetable oil





For the sweet and sour sauce:


1 onion, sliced


1 small red pepper, cut into 1 inch pieces


1 small orange pepper, cut into 1 inch pieces


1 lb can pineapple cubes in natural juice


1 tbsp cornstarch


2 tbsp tomato ketchup


2 tbsp light soy sauce


1 tbsp white wine vinegar


handful of fresh cilantro leaves, to garnish





Mix together the egg yolks, with a tbsp of water, the cornstarch, and some salt and pepper.


Heat 2 inches of oil in a wok or deep frying pan. Toss the chicken in the cornstarch mixture and deep-fry in batches for 5 minutes or until crisp and golden. Drain on paper towels.


Empty the oil from the wok to leave a thin coating in the pan. Stir-fry the onion and peppers over a high heat for 3 minutes.


Drain the pineapple cubes (reserving the juice), add to the pan, and cook for a minute ot two.


Mix together the cornstarch and a little of the pineapple juice to form a paste, then stir in the remaining juice, the ketchup, soy sauce, vinegar, and 1/2 cup water. Pour this into the pan and bring to a boil, stirring until the mixture thickens.


Stir the chicken pieces into the pan and simmer for 5 minutes until cooked through. Check the seasoning then divide between bowls.


Scatter the cilantro on top and serve. Enjoy!
