Any good cake recipes?

It doesn't matter what kind, I'd just like recipes that you use though, not ones you googled for me. Thanks!Any good cake recipes?
I've made this several times, always with good review. Moist and tasty.





Apple Cake





4 cups diced apples


2 cups sugar


1 cup raisins


2 tsp salt, divided


=================


1 cup oil


2 eggs, beaten


1 cup walnuts


=================


2 cups flour


2 ½ cups apple juice


2 t baking soda


2 t cinnamon





• Mix apples, sugar, raisins, 1 tsp salt. Let stand 1 hour


• Add oil, eggs and walnuts.


• Sift in flour, juice, baking soda, cinnamon and 1 tsp salt.


• Pour into greased 13” x 9” baking dish, 350 degrees for 1 hr and 15 minutes.


• Let cool 15 minutes before serving.

Individual Molten Chocolate Lava Cakes with Berries





Ingredients


Chocolate Cakes:


1 cup (2 sticks) unsalted softened butter, plus extra for buttering molds


8 ounces bittersweet chocolate, chopped


1/2 teaspoon instant espresso powder


4 large eggs


4 large egg yolks


2/3 cup granulated sugar


4 teaspoons all-purpose flour, plus more for dusting molds


3 tablespoons Frangelico or hazelnut liqueur


1 cup fresh raspberries


1 cup fresh strawberries


Fresh mint, for garnish


Directions


Butter and lightly flour 6 (6-ounce) ramekins. Tap out any excess flour.





In a small saucepan, bring to a boil 2 inches of water. In a large glass bowl, add butter, chocolate and espresso powder. Lower heat and place bowl over the simmering water. Slowly whisk mixture until the chocolate is almost completely melted. Remove bowl from heat and continue to whisk until all chocolate has melted. Allow to cool slightly.





In a large bowl, add eggs, yolks, and sugar. Using an electric mixer, beat until light and fluffy and pale in color. Reduce speed to medium-low and slowly pour in the chocolate mixture. Add the flour and mix until just combined. Do not overwork the batter.








Preheat oven to 450 degrees F.





Divide the batter between the molds. Line a baking sheet with parchment paper. Place chocolate molds onto baking sheet and place in oven for 7 minutes. If not baking immediately, cover chocolate molds with plastic wrap and refrigerate until ready to serve, up to 8 hours. When ready to bake, place refrigerated chocolate molds onto baking sheet and place in oven for 10 minutes. The top and sides should be cooked and dry and the inside will be runny.





Using oven mitts, carefully invert each mold onto a plate and let it sit for 10 seconds. Then lift 1 corner of the ramekin and the cake should slip out. Sprinkle about 1/2 teaspoon Frangelico over each cake. Spoon berries around the chocolate cake and garnish with mint. Serve warm.



Hi corinthians, without going right into it, I guess you know how to bake a cake, regardless of the type. But as I have been doing of late I add liqueur a dash of Galiano or if your doing a chocolate cake a drop or three of Tia Maria, for a Madeira cake a touch of Grand Mariner. There are so many cake recipes out there to choose from, more about choice. What I have been noticing, that some of my guests pick out the fruit if there is fruit in a cake, there is a thought to keep in mind, so I go with simple but enhance the flavor.

1 1/2 cups sugar


2 eggs


1/2 cup melted butter


2 cups flour


2 teaspoons baking soda


1/2 teaspoon salt


1 can (20 ounces) undrained crushed pineapple


(The pineapple can be sweetened or unsweetened)


1 cup light brown sugar (For Cake Topping)


1 cup chopped walnuts (For Cake Topping)





Mix ingredients together and pour into a greased (and floured) 9 x 13 baking pan. Top with the light brown sugar and the chopped walnuts. Bake at 350 F. for 40 minutes.

Are you looking for a basic yellow cake recipe? I made my first one a couple of weeks back and it turned out delicious! It was very moist especially for a from scratch cake. I will link the recipe I used from allrecipes.

Yummy Fudge Frosting


1 can sweetened condensed milk


12 ounces semisweet chocolate chips





Cook in the top of a double boiler over boiling water until melted and smooth























Semisweet Chocolate Ganache





1 cup Heavy cream


2 tablespoons Unsalted butter


2 tablespoons Granulated sugar


12 ounces Semisweet chocolate -- broken


1/2 pieces





Heat the heavy cream, butter, and sugar in a 2 1/2 quart saucepan over medium-high heat. When hot, stir to dissolve the sugar. Bring the mixture to a boil. Place the chocolate in a stainless steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth. Allow to cool to room temperature.























Swirl Frosting


1/2 cup granulated sugar


2 egg whites


2 tablespoons water


1 (7 ounce) jar Marshmallow Cr猫me


1/2 teaspoon vanilla extract





Combine sugar, egg whites and water in a double boiler. Beat with a hand-held electric mixer over boiling water until soft peaks form. Add Marshmallow Creme. Continue beating until stiff peaks form. Remove from heat and beat in vanilla extract.





Chocolate Swirl Frosting


Melt and cool 2 (1 ounce) squares unsweetened chocolate. Fold into Swirl Frosting























7-Minute Frosting


2 egg whites


1 cup granulated sugar


1/4 teaspoon cream of tartar


1/8 teaspoon salt


1/4 cup water


1 cup Marshmallow Cr猫me


1 teaspoon vanilla extract





Combine all ingredients except vanilla extract in the top of a double boiler. Place over boiling water. Beat until soft peaks form. Remove from heat and beat until stiff. Beat in vanilla extract.


























Angel Mallow Frosting


1/2 cup granulated sugar


2 tablespoons water


1/2 teaspoon vanilla extract

Any good frosting recipes that don't require powdered sugar?
You can use regular granulated sugar in a syrup to sweeten frosting instead of confectioner's sugar. Here's such a recipe:





1/2 cup sugar


1/2 cup dark corn syrup


4 eggs, room temperature


10 ounces butter, cubed and at room temperature





Bring the sugar and corn syrup to a boil in a small saucepan.





Using a mixer, whip the eggs until light and fluffy. With the mixer speed turned to low, slowly drizzle in the sugar syrup.





After all of the syrup has been added, turn the mixer speed up and begin incorporating the butter one piece at a time. Do not add the next piece until you can no longer see any remains of the last piece. Continue until all of the butter is incorporated and the frosting is nice and creamy.








If you don't like the idea of using raw eggs in a frosting, I'm sure you can take that same idea of making a syrup and then adding that straight to creamed butter. I'd take a recipe for a simple butter and confectioner's sugar buttercream, heat the liquid along with an equivalent WEIGHT of granulated sugar until it's dissolved, let it cool, and then whip it into the butter.
The only one I know of without powdered sugar is a chocolate ganache.





1/2 cup of heavy cream, warmed in microwave or on stovetop


Add 1-1/4 cup grated or chopped milk chocolate. Don't use chocolate chips as they contain stabilizers that will make a very stiff frosting.





Stir until combined and chocolate is melted. Chill for about 20 to 30 minutes, until slightly firm.





Mix with a mixer at medium speed. Chill for 20 or 30 minutes more. Will frost a 8 x 8 pan of bars or a small cake.






Chocolate ganache can easily be turned into frosting:





INGREDIENTS


9 ounces bittersweet chocolate, chopped (I just use semisweet chocolate chips)


1 cup heavy cream


1 tablespoon dark rum (optional - you can use other flavorings as well)





DIRECTIONS


Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.


Allow the ganache to cool slightly before pouring over a cake. Start at the center of the cake and work outward. For a fluffy frosting or chocolate filling, allow it to cool until thick, then whip with a whisk until light and fluffy.
Whip Cream Frosting





1 c Water


2 tb Flour


1/2 c Margarine


1/2 c Crisco


1 c Sugar


1 ts Vanilla extract

Instructions:


Cook water and flour until thick and creamy. Cool this mixture. Cream


together margarine, crisco, and sugar. When water and flour mixture is


cool, add to margarine, crisco, and sugar. Beat for 15 minutes. Add


vanilla for chocolate cake. Add almond extract for white cake.

Better Cream Whipped Cake Icing





录 cup cold water


1 tsp unflavored gelatin


1 cup heavy whipping cream


1 Tbsp. white sugar


陆 tsp vanilla extract





Chill mixing bowl and beaters for at least 15 minutes before using. Place water in a small microwave-safe bowl. Sprinkle gelatin over water and allow to soften 5 minutes. Dissolve gelatin by microwaving for 3 minutes, stirring after every minute. Remove from microwave and let stand at room temperature for 10 minutes; gelatin must be liquid but not warm when added to cream.





Remove bowl and beaters from refrigerator and pour in cream, sugar, and vanilla extract. Beat together just until beater marks begin to show distinctly. Add gelatin mixture to cream, pouring in a steady stream while beating constantly. Beat until stiff peaks form. Use immediately.



if you do have regular sugar you can just make it into powdered sugar by using a food processor or a blender on a high speed for a few seconds. . . .then you can use a powdered sugar recipe.

How to organize Recipes?

Does anyone have any ideas on how i can organize my recipes. I have a whole bunch of recipes cut out from magazines and I don't know how to organize themHow to organize Recipes?
I too have so many recipes that I have collected over the years! What I have been doing (and am still in the process of doing) is typing them (the ones that are old and I can not find online) the other recipes (like the ones from my Gourmet %26amp; Cooking Light subscription I download and print. I put them in the clear plastic sleeves (protects from cooking juices) and into a 3 ring binder. I also arrange them by section with section dividers. The 3 ring binder is easy because I just pop the recipe I want out. It's a bit of work but it is more organized.How to organize Recipes?
Get a 3 ring photo binder, or even just a 3 rings binder, and some of those tabs for labeling the division pages. Organize like a cookbook. Appetizers, soups, chicken, pasta, salads, etc. Then tape the recipes in there. The nice part is if you tape one or two to a page, you can write your notes in there too.
I bought some accordion file folders and store them in there. Every few months, I cull out the ones I'm positive will never be made and give them away on FreeCycle. It's difficult because I'm always taking in more than I'm giving away. The ones that passed our culinary needs (and will be made more than twice) get transcribed into a blank cookbook I bought.





ps some cooks store their recipes in photo albums or baseball-card binders.
I write all of my recipes on index cards and put them in a recipe box that I got at a dollar store. It is a lot of work having to write everything but it just looks more organized.

    My favorite is a spinach/artichoke casserole. There is no way to make this a pretty presentation though. I've tried to dress it up with variations, and it still comes out flat ugly. But oh soooooo good!





    8 oz. frozen artichoke hearts/quarters (Do not use canned. They usually have some sort of brine, and seem mushy to me.) Bird's Eye has frozen ones that come in a box, and Kroger/King Soopers carries a larger bag under their house label ';Private Selection.';





    8 oz. frozen CHOPPED spinach


    1 stick Cracker Barrel sharp cheddar cheese, cut into small cubes. Do not use shredded cheese.


    1 packet dried onion soup mix


    16 oz. sour cream. I use lowfat, it doesn't seem to affect taste or texture.





    Cook artichokes and spinach on stovetop, according to directions. Drain artichokes, and press spinach in colander until excess moisture is drained off.





    Mix all ingredients in a 2 qt. casserole sprayed lightly with Pam or similar product. Bake at 325 for 40 minutes.Looking for good recipes for artichoke and spinach dishes of all sorts?
    Classic Spinach Dip


    300g frozen chopped spinach-thawed


    2 cups reg. or light sour cream


    1cup mayo (hellmans real or light)


    1 pkg. dry veg soup mix


    1 can 284g or 10oz water chestnuts drained and chopped


    3 green onions chopped





    squeeze excess moisture from the spinach .In bowl combine spinach, sour cream, mayo, soup mix, water chesnuts and green onion. Stir until well combined. Cover and put in fridge about 2hrs to blend flavours, serve with assorted fresh veggies, pumpernickel bread . scoop out a centre piece from pumpernickel round loaf. place bowl of dip in centre..use the cut out centre/cut into chunks and cut down slices from pumpernickle loaf so ppl can rip off chunks and dip into spinach dip* YUMMMMMMMMMMM* Never had a complaint yet~*

    artichoke and spinach pie
    hey.. never really try to cook this myself! But once tried something real nice in a pizza place.


    Its nacho served with artichoke and spinach dip! Its cream base! Yum Yum
    Hot Spinach and Artichoke Dip


    Ingredients


    1 1/4 cup shredded Parmesan, Romano, and Asiago cheeses


    1 10oz package frozen spinach, thawed and drained


    1 14oz can artichoke hearts, drained


    1/2 tsp garlic powder


    3/4 cup mayonnaise





    Directions


    Preheat oven to 350F degrees. Chop spinach and artichoke into small pieces. Mix all ingredients and spread into a pie plate or medium baking dish. Bake 20-25 minutes or until heated through. Can also be made up to 24 hours ahead and then baked before serving. Serve with toasted bread chips or tortilla chips. Makes 20 servings or 2 TBSP each.

    I have high blood pressure and have stopped eating at fast food joints. I love Hamburgers and French Fries! I need healthy ways to cook (recipes?) ground beef and would like to know if you have ideas I can use. It can be other things besides Hamburgers. Right now I'll try anything.     Here are some staple recipes. To make them healthier, choose the low fat or fat-free options and leaner meat (despite what my burger recipe says, good burgers can be made with lean meat, but don't squish the burger while it cooks. I hope some of these help!)





    Burgers





    There really is a secret to great burgers:





    First, you have to start with meat that is NOT lean, like 85%. (I know, it goes against our instincts, but that's what makes a really juicy hamburger). Next, you need to get a hamburger spice (found in the spice isle). Mix the spice in with the hamburger before you make patties, for a well-distributed flavor. Make nice, round, thick patties. When you grill them, DON'T smash them down with your spatula. You want the juice to stay inside.





    Next, you need to find the best condiments you can. Offer several kinds of mustard (I love the spicy german kind), SWEET sliced onions, pickles that fit the hamburger bun, the best tomatoes you can find, ketchup, of course.





    As for the bun. DON'T buy the pre-packaged kind, unless you have to. Go to the deli and see if they offer home made buns. Those would be much better. Also...get several kinds of cheese, again from the deli, to offer guests.





    I would also make a killer salad or two. This always helps make a meal. Here is one salad everyone raves about, and it's really easy:





    Caesar Coleslaw





    1 pkg pre-made coleslaw


    1/4-1/2 cup shredded parmesean cheese


    1/2 pkg caesar croutons


    1 bottle creamy caesar dressing





    Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!





    and another that's quite good:





    Broccoli Cheese Salad





    4 cups broccoli, cut into small pieces


    1 red onion, chopped


    1 cup cubed cheddar cheese


    6 slices bacon, cooked, crumbled





    Combine above ingredients. Combine 1 cup mayonnaise, 录 cup sugar, and 2 Tbsp vinegar, salt and pepper to taste. Pour over salad.





    Potatoe salad is always a hit. I haven't been able to make one that is better than the deli makes. It's called Reeser's potatoe salad. BBQ beans are always wonderful as a side, too.

    This is so easy, and you can't believe how tasty!





    Swiss Steak


    1 round steak


    2 cans stewed tomatoes


    Egg noodles, cooked.





    Sear the steak on both sides.


    Put in crock pot and sprinkle with a good seasoned salt.


    Add the two cans of tomatoes.


    Cook all day (8 hours or so).


    Serve over cooked and buttered egg noodles.


    Yummy!


    Lemonade Chicken





    6 boneless, skinless chicken breasts


    1 (6oz) can frozen lemonade, thawed


    1/3 cup soy sauce


    1 tsp. garlic powder





    Place chicken in greased 13x9 casserole dish. Combine next 3 ingredients and pour over chicken. Cover with foil. Bake at 350 for 45 minutes. Uncover, pour juices over chicken and cook another 10 minutes uncovered. Serve over hot, cooked rice.











    Taco Salad


    1lb ground beef browned


    1 can of olives, sliced


    1 can of kidney beans, drained


    lettuce


    tomatoes


    shredded cheese


    Green Onions


    Peppercorn ranch dressing mixed with Pace chunky salsa (we like medium)


    1 bag of corn chips crushed


    Mix all together in a salad bowl.


    Yummy!


    Cheesy Pepper Steak





    1 录 pound sirloin steak, cut in strips


    Seasoned salt


    1-16oz pkg. frozen bell pepper and onion strips, thawed


    1-16oz pkg. cubed Mexican processed cheese





    Sprinkle steak with seasoned salt. Coat large skillet with non-stick vegetable spray and cook steak strips for 10 minutes or until no longer pink. Remove steak from skillet and set aside. Stir in vegetables and 陆 cup water and simmer for 5 minutes or until all liquid cooks out. Add cheese and turn heat to low. When cheese melts, stir in steak until heated through and serve over hot cooked rice.





    Tangy Spareribs





    5-6 pounds spareribs


    1-6oz can frozen orange juice concentrate, thawed


    2 tsp Worcestershire sauce


    陆 tsp garlic powder


    Spicy seasoned salt


    Pepper





    Place spareribs in shallow baking pan, meat side down and sprinkle with salt, pepper, and seasoned salt. Roast at 375 for 30 minutes. Turn ribs, roast another 15 minutes and drain off fat. Combine orange juice, Worcestershire and garlic powder and brush mixture on ribs. Reduce heat to 300. Cover ribs, roast 2 hours or until tender and baste occasionally.





    Quick Chicken Casserole





    3 cups cooked, chopped chicken or turkey


    1-16oz. package frozen broccoli florets, thawed


    1-10oz. can cream of chicken soup with 录 cup milk


    2/3 cup mayonnaise


    1 cup shredded cheddar cheese


    Salt and pepper


    1 陆 cups crushed cheese crackers





    Combine chicken, broccoli, soup, mayo, and cheese, salt and pepper to taste. Mix well. Pour into buttered casserole dish and spread cheese crackers over top. Bake uncovered at 350 for 40 minutes or until bubbly.





    Best Burritos Ever鈥?br>

    1 lb. hamburger


    1 can refried beans with lime


    4 little cans chopped green chilis


    1 Tbsp. Cumin


    Sharp cheddar cheese


    1 pkg flour torillas


    Sour cream (optional)


    Salsa (optional)





    Brown the hamburger. Drain the grease. Combine the beans, chilis and cumin. Cook until hot. Put 1/4 cup cheese in tortilla and microwave for 20 seconds. Fill with meat mixure and sour cream and salsa. Fold. Enjoy.





    Easy Chicken Tortilla Soup





    1 can cream of chicken soup


    1 can nacho cheese soup


    1 can red enchilada sauce


    1 large can chicken


    1 soup can milk





    Combine all in saucepan. Cook on medium-low until heated through, stirring frequently.





    Here's a few sides, also:





    Lemon Broccoli





    2-4 bunches broccoli


    录 cup butter


    1 Tbsp. lemon juice


    陆 tsp seasoned salt


    Pepper to taste





    Steam broccoli until tender-crisp. Drain water. Add next 4 ingredients to hot pan. Stir until coated.





    Cucumber Salad





    Slice 2 peeled cucumbers. Slice thinly. Add 1 small sliced or chopped red onion. Cover with bottled red wine vinaigrette dressing. Salt and pepper to taste. Best if you let sit in refrigerator for at least an hour.

    try grilling burgers, this allot healthier than having them fried as more fat drains off them when cooking.





    Also try oven fries or chips, much healthier than fried ones. They are really popular here in the UK.





    Another thing, if you have high blood pressure you should really be steering clear of red meats. Try chicken or fish instead.

    Grilling your burgers and using leaner meat is a good start. Grilling drains alot of bad fats as well know. And leaner meats are a good way to get what you crave and eat smart. ALSO cutting the salt on fries by baking them is a good way to get the crispy texture and flavor you love with out all the grease and salt. My hubby has HB too I use seasalt if he wants a salt fix but only at most a tsp per meal no more. Good luck

    instead of fries..use eggplant..


    pour some olive oil over your sliced eggplant,add pepper and paprika..


    mushrooms scallions red and green pepper..stem onions..


    you can cook almost anything on the grill..its a lot healthier
    Use leaner mince, and grill on a rack in a pan in the oven, and watch the fat drip out.


    Without the fat, you may want to add a little extra 'something', but just use your regular recipes.


    I am constantly changing how I make mine by adding different herbs and spices to my mix.


    Normally I add some mixed herbs and a little curry powder.


    (the curry powder adds a little flavour, but not enough to actually curry the mix)

    CLAM CHOWDER (LIKE QUIZNO'S)





    4 quarts littleneck clams (about 1 2/3 cups cooked and chopped)


    1 clove garlic, chopped


    1 cup water


    2 ounces salt pork, finely chopped


    2 cups chopped yellow onions or shallots


    3 tablespoons flour


    1 1/2 pounds potatoes, peeled, and diced into 1/4-inch cubes


    4 1/2 cups clam broth


    3 cups fish stock


    2 cups heavy cream


    1 tsp pepper


    Salt to taste


    1/2 cup sherry





    Clean the clams and place them in a large pot along with the garlic and water. Steam the clams just until opened, about 6 to 10 minutes, depending


    upon their size. Drain and shell the clams, reserving the broth. Mince the clam flesh, and set aside.





    Cook the salt pork and remove the little pieces.





    Slowly cook the onions in the fat for about 6 minutes, stirring frequently, or until cooked through but not browned.





    Stir in the flour and cook, stirring, for 3 minutes.





    Add the clam broth and fish stock, a stir quickly till smooth. Bring the liquid to a boil, add the potatoes, lower the heat, and simmer until the potatoes are cooked through, about 15 minutes.





    Stir in the reserved clams, salt-pork pieces and cream.





    Serves 6

    4 boneless pork chops, 1/2'; thick


    1 tbsp. olive oil

    Season chops with black pepper. Heat oil in nonstick skillet over medium-high heat. Add chops and cook 10 minutes or until well browned. Remove chops; set aside.


    Add potatoes, onion and oregano; cook 5 minutes or until browned, stirring occasionally. Return chops to skillet; add broth and peppers. Heat to a boil; cover and cook over low heat 5 minutes or until done.

    Wild Grain Rice - the 90 second microwavalbe kind


    1 can Cream of Chicken Soup


    1 lrg can of Chicken





    Heat soup while rice is in microwave. Pour rice into soup and add chicken.
    1 lb ground beef, 1 chopped green pepper, 1 chopped onion. Add all to pot after beef is fully browned and drained. When onions and green peppers are soft, add 2 cans of campbells tomato soup and add minute rice to it.
    Ravioli Lasagna





    1 package (20 ounces) BUITONI庐 Refrigerated Family Size Four Cheese Ravioli, prepared according to package directions


    1 container (15 ounces) reduced-fat ricotta cheese


    1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry


    2 large eggs, lightly beaten


    1/3 cup fat free milk


    2 containers (15 ounces each) BUITONI庐 Refrigerated Marinara Sauce


    1/4 cup (1 ounce) BUITONI庐 Refrigerated Freshly Shredded Parmesan Cheese





    PREHEAT oven to 350掳 F. Grease two 8 x 4-inch loaf dishes.





    COMBINE ricotta cheese, spinach, eggs and milk in medium bowl. Place one-fourth pasta in each prepared dish. Add one-fourth sauce and half ricotta mixture to each dish. Top each with half remaining pasta and half remaining sauce. Sprinkle both dishes with Parmesan cheese. Cover one dish with plastic wrap, then overwrap with foil. Label and freeze for up to 2 months.





    COVER remaining dish with foil. Bake for 40 to 45 minutes or until heated through. Let stand for 10 minutes before serving.





    TO BAKE FROZEN LASAGNA: Place dish in refrigerator overnight. Preheat oven to 375掳 F. Remove foil and plastic wrap; recover with foil. Bake for 1 hour or until heated through. Let stand for 10 minutes before serving. Yields 4

    Cube about 4 large potatoes.....just wash them, don't peel

    Mock Baked Potato Soup





    1 med head cauliflower


    2 Tbsp chopped onion


    salt and pepper


    32 oz chicken broth


    2 slices crisp bacon


    3 Tbsp chopped chives


    3 oz shredded Cheddar cheese


    1/2 cup or more of light cream


    2 tbsp butter





    Directions:


    Steam cauliflower till tender.


    Drain, place in baking dish, drizzle with olive oil and salt and pepper and broil till golden brown.


    Heat little oil and saut茅 onions till soft but not brown.


    Add cauliflower, broth and simmer till very tender.


    Puree half mixture in blender and return to pot.


    Add cheese, bacon, cream and chives and stir till cheese melted.


    Add butter, stir till melted and serve.

    Just get 1 salmon fillet for every person. Put them in a large saucepan with boiling water. Add a dash of stock powder (vegetable or chicken) and some dried hers, and leave to poach on a medium temperature for 10-15 minutes or until soft and flaky!     Peanut Butter Teriyaki Chicken





    Serves 8


    Peanut butter adds a spiky taste to this traditionally sweet Japanese dish. You can marinate the chicken breasts all day while you're at work, then pop them under the broiler when you come home for a quick, easy dinner. Have lots of white or brown rice on hand, or serve the glazed breasts with a vinegary salad of lettuce, tomatoes, broccoli florets, and sprouts.





    Ingredients:





    陆 cup soy sauce, preferably reduced-sodium soy sauce


    录 cup honey (see page 10)


    录 cup creamy natural peanut butter


    2 tablespoons mirin (see page 10)

    Line your broiler pan with aluminum foil to make cleanup easier. Place the pan 4 to 5 inches from the heat source and preheat the broiler for 5 minutes. Place the chicken breasts on the broiler pan and broil until firm to the touch and cooked through, about 10 minutes, turning once. An instant-read meat thermometer inserted into the thickest part of the breast meat should read 165潞F. Transfer the cooked breasts to a serving platter and let stand for 5 minutes before serving to let the juices reincorporate into the meat.





    Grill Them!


    This dish is excellent on the grill, over either direct or indirect heat. If you use direct heat, prepare the grill as suggested by the manufacturer's instructions, then place the chicken breasts directly over the flame or the coal bed; grill until cooked through and browned, about 8 minutes, turning once. If you use indirect heat, prepare a hot coal bed to one side of the grill or turn on only one section of a gas grill. Place the breasts on the other side of the grill, away from the heat, and close the lid; barbecue for about 15 minutes, turning once.





    Customize Them!

    Buffalo Chicken Wings Recipe


    Ingredients


    4 to 5 pounds chicken wings


    Freshly ground black pepper


    Salt (if desired)


    red pepper flakes


    5 Tbsp Louisiana-brand hot sauce or Tabasco sauce, or a buffalo hot sauce (add more if you wont it more spicy)


    1 Tbsp white wine vinegar.


    mix it all together and leave it in the refrigerator for a couple of hours or even over night (the more the better) and then BBQ it, its really yummy

    2-4 boneless skinless chicken breasts


    1 envelope ranch dressing mix


    2 tablespoons olive oil





    preheat oven to 425

    Marinate your chicken for a couple of hours in soy sauce, honey and brown mustard mixed to taste. You can grill or bake this chicken and it is fantastic! You can play with all kinds of additions like chiles, ginger, green onions or whatever you like. There's no added fat but you'd never know it by the taste. It's so easy too!
    I just found Sweet Vidalia Onion BBQ sauce, I think Kraft makes it. I just let the chicken sit in the sauce all day, then throw it on the grill and baste it as it is cooking. It was very tasty.
    Marinate chicken breasts in Italian dressing, about 1 T. per breast. I usually thaw them in a Ziploc bag with the dressing over night and they are ready at dinner time. Just throw them on the grill. Turns out nice and tender.

Need tortillas, jar of salsa, can of fiesta corn, 1lb ground beef or turkey, medium onion, clove garlic, can of kidney beans, 2-3 cups chredded mexican cheese, tbl spoon chili powder, can of diced tomatoes, greased lasagna pan.     Drunken Mexican Chicken (Pollo Boracho) Recipe





    Yield: 6 Servings





    1 Broiler-fryer chicken, cut -into 10 serving pieces


    1/4 c Corn oil


    1 ts Salt


    1 ts Paprika


    3/4 ts Ground black pepper


    1/2 ts Crushed oregano


    1/2 ts Cumin seed


    1/4 ts Garlic powder (or two fresh garlic cloves finely minced)


    1 Cube chicken bouillon, -crushed


    16 oz Can tomatoes, chopped (or -substitute fresh ones)


    1 lg Onion, sliced


    5 med Zucchini, sliced


    1 c Red Burgundy wine





    Heat corn oil in Dutch oven over medium heat. Add chicken and brown well on all sides. Sprinkle in salt, paprika, black pepper, oregano, cumin, garlic powder and bouillon.





    Reduce heat to medium low; add tomatoes, onion, zucchini and wine. Cook, covered, 30 minutes; uncover and continue cooking another 15 minutes or until liquid is somewhat reduced and chicken is done. Excellent when served with brown rice, pinto beans and avocado fruit salad.


    Substitute 1/2 bottle of beer and 2 tablespoons of tequilla and one lime squeezed instead of the red wine. Also substitute 1 jar of tomatillos for the canned tomatoes for a green sauce.


    Always reserve beer or wine for the cook as you prepare this dish, this way the bird and the cook get sauced.

    I love making enchiladas for the family...This is very quick and easy (my own recipe)


    1 1/2 to 2 lbs of ground beef


    I like to add Mexicorn (which is in your canned corn isle)


    1 can of diced tomatoes


    1 small jar of jalapenos (optional)


    1 large can of enchilada sauce


    cook beef...add all the ingredients.. (only use 1/2 can of sauce in the meat)


    Get some soft large taco shells and scoop some into your shell, wrap them up and put them on a large cookie tray


    Add the rest of the sauce to the top of them and sprinkle lots of shredded cheese on them also....put in a pre heated oven 350 for 15-20 mins....and your done...top off with sour cream and taco sauce and they are good to go
    Here's a good Tex-Mex one: Potato/Beef casserole





    1 pound ground beef


    1 egg, beaten


    1/2 cup bread crumbs


    1/4 cup milk


    1 packet Taco seasoning powder


    3 cups diced potatoes


    1/2 cup salsa


    1/4 cup chopped onion


    1/4 teaspoonful salt


    1 cup shredded jalapeno cheddar cheese (or just cheddar)





    Combine bread crumbs, milk, taco seasoning and ground beef. Mix well and spread over the bottom and sides of a 9 or ten-inch pie pan. Combine other ingredients, except the cheese, in another bowl, then spread over the beef mixture in the pie pan. Bake in a preheated oven at 350 degrees for 35 minutes. Remove from oven, spread the shredded cheese on top and return it to the oven for two to three minutes -just long enough to melt the cheese. Serve with hot cornbread, buttermilk biscuits or corn muffins, buttered. If you're not used to lots of fire in your food, use mild salsa. Otherwise, use as spicy a variety as you can stand!

    Ingredients:





    1 1/2 cups flour


    2 1/2 cups cornmeal


    5 teaspoons baking powder


    1 1/2 teaspoons salt

    1 tablespoon cumin


    1 teaspoon chili powder


    1 can whole kernel corn (15 ounce), drained


    1 can green chiles (4.5 ounce), diced


    2 eggs, beaten


    2 cups milk


    1 stick butter, melted, (1/2 cup)


    1 cup grated cheddar cheese





    Preparation:





    Preheat your oven to 425°F.





    Add all of the dry ingredients to a large mixing bowl and incorporate. Add drained corn and green chilies. Add eggs, milk, melted butter, and cheddar cheese.





    Mix well. Pour into a 13 X 9 pan (1/4 sheet), or muffin pans that have been sprayed with cooking spray. Bake for 20 minutes or until golden brown. Freezes well

BEAT MILK, BAKING MIX AND EGGS UNTIL SMOOTH, 15 SECONDS IN BLENDER ON HIGH OR 1 MINUTE WITH HAND BEATER. POUR INTO PLATE. BAKE 25 MIN. TOP WITH DICED TOMATOES; SPRINKLE WITH CHEESE. BAKE UNTIL KNIFE INSERTED BETWEEN CENTER AND EDGE COMES OUT CLEAN. 8 ~10 MIN. COOL 5 MINUTES. SERVE WITH SOUR CREAM,LETTUCE, TOMATOES,AND CHEESE, IF DESIRED.

    Ingredients

    1 lb Beef skirt steak


    1 cl Garlic, chopped


    1 ts Cumin


    1 tb Chopped fresh cilantro


    1/3 c Worcestershire sauce


    1/4 c Soy sauce


    1 ts Liquid Smoke


    1 md Yellow onion, sliced in


    Rings


    Juice from 1 large lime


    Pepper to taste.


    Green and yellow peppers


    Guacamole


    Refried beans


    Mexican rice

    Those self-appointed guardians of Texas cuisine, Bubba %26amp; Billy Joe, stopped by the other day and saw a request for fajitas so Bubba asked me to post his version. Serves 4 regular people or two hungry Texans.


    Trim fat from steak. Pound lightly to tenderize. Place meat in non-metallic container. Top with onion rings. Combine remaining ingredients. Pour over meat and onions. Cover and refrigerate overnight. (At this point he says to go out and just party, party, party -- just forget about these tasty fajitas 'til tomorrow.) Next day - or whenever you find your way back home, remove the meat and onions, reserving the marinade. Separate the meat and onions. Place meat on grill, basting often with the marinade and turning often to prevent charring. You gotta do this on a grill - it's not the same in a broiler. Meanwhile, saute the onions in butter with some green and maybe some yellow peppers sliced into strips. When the meat's done, slice it into thin strips, cutting across the grain. Serve with homemade refried beans, Mexican rice, guacamole, picante sauce or salsa, sour cream, grated cheddar, your sauteed veggies and of course, warm flour tortillas to hold it all together.

    1/2 lb Ground pork


    1/2 lb Ground beef


    1 Egg


    1/2 c Brown rice, uncooked


    1 Onion, diced fine


    1/2 ts Tomio (thyme)


    8 c Water


    1 Tomato, chopped


    1 Clove garlic, diced


    1/2 c Chili huerta


    2 Yerba buena


    1 Thick slice French bread


    1/2 ts Comino (cumin)


    2 Carrots, sliced thin


    1 c Peas, fresh or frozen








    Instructions





    Mix pork, beef, egg, rice, 1/2 of onion, and tomio together; make into small balls. Bring water to boil and add balls; simmer at low boil for 1 hour. Add tomato, garlic, chili, and rest of chopped onion; let simmer 35 minutes. Add yerba buena and simmer 10 minutes. Soak french bread in small amount of soup broth until very soft. Place in blender with comino; chop together; add to soup. Next add carrots and peas; simmer until vegetables are tender. Serve.

    4 Skinless, boneless chicken breast halves


    (about 1 1/2 pounds)


    1 1/2 c Coarsely shredded Monterey Jack cheese with


    Jalapeno peppers ( 8 ounces)


    2 ts Dried oregano, crumbled


    3/4 c Yellow cornmeal


    1 tb Chili powder


    1/3 c Flour


    2 lg Eggs


    1 c Vegetable oil


    Guacamole and/or salsa








    Instructions





    Place each chicken breast half between waxed paper and pound very thin with a mallet or rolling pin to form a ';cutlet';. Be careful not to pound holes in the meat. Place 1/3 cup cheese in center of each ';cutlet';; sprinkle with oregano. Fold sides over to seal cheese, then roll up. Hold in place with wooden toothpick. Combine cornmeal with chili powder on sheet of waxed paper; place flour on another. Beat eggs slightly in a pie plate. Coat the stuffed rolls with flour; dip in egg then cornmeal mixture to coat well. Chill at least an hour. (This much of the preparation can be done ahead). Preheat oven to 350 F. In a large skillet, heat oil until very hot. Quickly brown the stuffed chicken rolls, turning often, until golden. Lift out with a slotted spoon; drain well. Place in a shallow baking pan. Bake 20 minutes or until juices run clear when pierced with a small knife. Serve with guacamole and/or salsa.

    Sour Cream Chicken Enchiladas





    Ingredients





    (6 servings)





    12 Corn tortillas


    4 c Green chile sauce


    3 c Minced, cooked chicken


    1 lb Jack cheese, grated


    1/4 c Minced onion, (optional)


    16 oz Sour cream


    Salt to taste





    GREEN CHILE SAUCE:


    1/4 c Olive oil


    1 Clove garlic, minced


    1/2 c Minced onion (optional)


    1 tb Flour


    1 c Water


    1 c Chopped green chiles


    Salt to taste








    Instructions





    To Prepare Green Chile Sauce: Saute garlic and onion in oil in a heavy saucepan. Blend in flour with a wooden spoon. Add water and green chile and mix well. Add salt. Bring to a boil and simmer, stirring frequently for 5 minutes.


    Heat tortillas on a hot griddle and keep warm under a towel or heat in oil, drain on paper towels and keep warm. Mix one cup chile sauce with the chicken. Put 1/4 cup of the mixture on each tortilla and roll it up. Place in a baking dish, cover enchiladas with grated cheese and add onion if desired. Pour remaining sauce over enchiladas and bake at 350 Deg F for about 20 minutes. Smother with sour cream and return to oven for 10 minutes or until all is hot. Serve immediately.

As the cookies are baking, take a microwaveable bowl. Take the hershey chocolate bars and put them in the bowl. Melt them down into a liquid. Once the cookies are ready, put them on a tray like throw away plate( or just improvise). Pour the chocolate over the top of the cookies as they sit on the plate. The chocolate will be on the plate as well as the cookies and no part of the cookie should be showing. Then, stick the cookies in the freezer. Wait 10-15 minutes. Then use a knife and cut around the cookies, freeing them from the chocolate crust that bound them to the plate. Voila, you now have a chocolate chip top shelled cookie.








    If you want to have fresh, hot cookies, you can use mini cookie arches, allowing the cookie to bake at an angle and giving them a the round cookie shape, but a hollowed out bottom.     SPINACH AND FETA STUFFED ONIONS - great appetizer of snack





    2 large sweet or Spanish onions (about 1-1/2 pounds total, peeled)


    2 teaspoons olive oil


    1 clove garlic


    One 10-ounce package frozen chopped spinach, thawed and squeezed dry


    1 teaspoon fresh lemon juice


    1/4 teaspoon freshly ground pepper


    1/4 cup bread crumbs


    1/4 cup (1 ounce) crumbled feta cheese





    Place the onions in a large saucepan and cover with water. Bring to a boil and cook until the onions are partially tender, about 10 to 15 minutes. Drain and cool; cut the onions in half crosswise. Scoop out the center of each onion half, leaving a 1/2-inch shell. Reserve the centers. If necessary, cut a small piece from the end of each onion shell so the shells will stand upright.


    Prepare a shallow baking dish large enough to hold the onion halves in one layer with non-stick pan spray. Place the onions in the prepared dish, hollowed sides up.


    Preheat the oven to 350 degrees F.


    Chop the reserved centers of the onions. Saute in oil with the garlic in a medium saucepan until tender, about 5 minutes. Stir in the spinach, lemon juice, and pepper; cook until the liquid evaporates. Remove from the heat; stir in the bread crumbs and cheese


    Fill the onion shells with the spinach mixture. Cover with foil and bake about 25 minutes. Serve hot.











    CITRUS ROASTED TURKEY (THIS IS GREAT FOR A SPECIAL OCCASSION LIKE CHRISTMAS OR NEW YEARS)





    6-8 Pound WHOLE TURKEY washed and drained


    1/4 Cup frozen lemon juice concentrate thawed


    1/4 Cup fresh lemon juice


    1/4 Cup honey


    1/4 Cup olive oil


    3 Tablespoons fresh lime juice


    3 Tablespoons fresh chopped mint leaves


    1 Tablespoon grated orange peel


    2 Teaspoons grated lemon peel


    1 Teaspoon grated lime peel


    1/3 Cup orange juice


    Pinch salt and pepper


    1/4 Teaspoon cumin


    1/4 Teaspoon cinnamon


    Pinch thyme


    1 red onion sliced





    In a large bowl, combine all juices, honey, oil, mint, citrus peels, salt, pepper, herbs and spices. Mix well. Add turkey to the mixture, turning a few times to cover with marinade.


    Top turkey with sliced onions.


    Cover bowl with foil. Marinate turkey in the refrigerator for 3-8 hours.


    When ready to roast, remove turkey from marinade and discard onions. Pour marinade into a saucepan and bring to a boil, boil for 5 minutes. Set aside.


    Place turkey, breast side up, on a rack in a large shallow (about 2-1/2 inches deep) roasting pan. Insert oven-safe meat thermometer into the thickest part of the thigh, being careful the pointed end does not touch the bone.


    Roast turkey in a preheated 325 degree F. oven about 2-3/4 to 3 hours. Baste turkey frequently with marinade as it cooks. If needed, loosely cover with lightweight foil to prevent excessive browning.


    Continue to roast until the thermometer registers 180 degrees F. in the thigh, or 170 degrees F. in the breast.


    Remove turkey from the oven and allow it to rest for 15-20 minutes before carving.











    MARINATED STEAK KABOBS





    1/4 cup lite soy sauce


    1 tablespoon honey


    2 tablespoons dry sherry


    1 teaspoon orange zest


    1 tablespoon canola oil


    1 pound sirloin steak, trimmed of any fat and cut into 1-1/2 inch cubes


    1 large green pepper, seeded and cut into 1-inch squares


    1 large red pepper, seeded and cut into 1-inch squares








    Combine the soy sauce, honey, sherry, zest, and oil in a zippered plastic bag. Add the beef and close the bag. Refrigerate for 2 hours or overnight.


    Drain marinade. Soak wooden skewers in a pan of warm water for 30 minutes. Thread the steak and peppers alternately onto skewers.


    Prepare an oven broiler or outdoor grill with the rack set 4 inches from the heat source. Grill on each side over medium heat for a total of about 10 minutes, or until desired degree of doneness.











    BAKED FRIES





    2 large potatoes


    1/2 teaspoon salt


    1 tablespoon vegetable oil


    1/8 teaspoon paprika





    Preheat oven to 450 F degree.


    Peel potatoes and cut into slices 4 inches long and 1/4 inch wide; place in a bowl of iced water to crisp.


    Just before cooking, turn onto paper towel and pat dry.


    Spread pieces in one layer of a shallow baking pan.


    Sprinkle with the vegetables oil.


    Shake pan to spread oil evenly over potatoes.


    Bake 30-40 minutes, turning frequently, until gold brown.


    Empty potatoes onto paper towels.


    Sprinkle with salt and paprika.








    CAJUN CHICKEN





    1-1/2 to 2 pounds split chicken breasts


    1/2 dried thyme, crushed


    Nonstick spray coating


    1/4 teaspoon garlic salt


    2 tablespoons nonfat milk


    1/8 teaspoon ground white pepper


    2 tablespoons onion powder


    1/8 teaspoon crushed red pepper


    1/8 teaspoon ground black pepper





    Rinse chicken, pat dry. Cut off skin and discard.


    Spray a 13 x 9 x 2 inch baking dish with nonstick cooking spray.


    Arrange the chicken in the dish; meat side up.


    Brush lightly with milk.


    In small bowl mix onion powder, thyme, garlic salt, white pepper, red pepper, and black pepper.


    Sprinkle over chicken.


    Bake in a 375 degree oven for 45 minutes, or until the chicken is cooked through.








    BLUEBERRY TORT





    3 eggs, separated


    1 tbsp sugar


    1/3 cup ground almonds


    2-1/2 cup fresh blueberries


    2 tsp cornstarch


    1/2 cup whipping cream


    1 tsp sugar substitute


    1/2 cup vanilla yogurt





    Beat egg yolks and sugar until light. Add almonds. Beat egg whites until stiff. Fold egg whites into egg yolk mixture.


    Line a 13 x 9 inch baking pan with waxed paper. Pour batter into the pan. Bake in a 325F oven for 12 to 15 minutes.


    Remove from the pan and cool. Cut into small squares.


    To make blueberry sauce, puree 1/2 cup blueberries in a food processor or blender. Dissolve cornstarch in cream. Cook cream, remaining blueberries, and blueberry puree over low heat until thickened, about 5 minutes. Cool. Stir in sugar substitute.


    To serve, line a serving dish with 1/2 of blueberry sauce; arrange cake squares over blueberry sauce. Top with remaining sauce. Spoon on yogurt. Serve immediately. ,Does anyone have any great New Year's recipes?

    In a large container, mix together sugar, cranberry juice, pineapple juice and almond extract. Refrigerate for 1 day.


    To serve, pour juice mixture into a punch bowl. Stir in ginger ale.

    When ready to roast, remove turkey from marinade and discard onions. Pour marinade into a saucepan and bring to a boil, boil for 5 minutes. Set aside.


    Place turkey, breast side up, on a rack in a large shallow (about 2-1/2 inches deep) roasting pan. Insert oven-safe meat thermometer into the thickest part of the thigh, being careful the pointed end does not touch the bone.


    Roast turkey in a preheated 325 degree F. oven about 2-3/4 to 3 hours. Baste turkey frequently with marinade as it cooks. If needed, loosely cover with lightweight foil to prevent excessive browning.


    Continue to roast until the thermometer registers 180 degrees F. in the thigh, or 170 degrees F. in the breast.


    Remove turkey from the oven and allow it to rest for 15-20 minutes before carving.











    MARINATED STEAK KABOBS





    1/4 cup lite soy sauce


    1 tablespoon honey


    2 tablespoons dry sherry


    1 teaspoon orange zest


    1 tablespoon canola oil


    1 pound sirloin steak, trimmed of any fat and cut into 1-1/2 inch cubes


    1 large green pepper, seeded and cut into 1-inch squares


    1 large red pepper, seeded and cut into 1-inch squares








    Combine the soy sauce, honey, sherry, zest, and oil in a zippered plastic bag. Add the beef and close the bag. Refrigerate for 2 hours or overnight.


    Drain marinade. Soak wooden skewers in a pan of warm water for 30 minutes. Thread the steak and peppers alternately onto skewers.


    Prepare an oven broiler or outdoor grill with the rack set 4 inches from the heat source. Grill on each side over medium heat for a total of about 10 minutes, or until desired degree of doneness.











    BAKED FRIES





    2 large potatoes


    1/2 teaspoon salt


    1 tablespoon vegetable oil


    1/8 teaspoon paprika





    Preheat oven to 450 F degree.


    Peel potatoes and cut into slices 4 inches long and 1/4 inch wide; place in a bowl of iced water to crisp.


    Just before cooking, turn onto paper towel and pat dry.


    Spread pieces in one layer of a shallow baking pan.


    Sprinkle with the vegetables oil.


    Shake pan to spread oil evenly over potatoes.


    Bake 30-40 minutes, turning frequently, until gold brown.


    Empty potatoes onto paper towels.


    Sprinkle with salt and paprika.








    CAJUN CHICKEN





    1-1/2 to 2 pounds split chicken breasts


    1/2 dried thyme, crushed


    Nonstick spray coating


    1/4 teaspoon garlic salt


    2 tablespoons nonfat milk


    1/8 teaspoon ground white pepper


    2 tablespoons onion powder


    1/8 teaspoon crushed red pepper


    1/8 teaspoon ground black pepper





    Rinse chicken, pat dry. Cut off skin and discard.


    Spray a 13 x 9 x 2 inch baking dish with nonstick cooking spray.


    Arrange the chicken in the dish; meat side up.


    Brush lightly with milk.


    In small bowl mix onion powder, thyme, garlic salt, white pepper, red pepper, and black pepper.


    Sprinkle over chicken.


    Bake in a 375 degree oven for 45 minutes, or until the chicken is cooked through.








    BLUEBERRY TORT





    3 eggs, separated


    1 tbsp sugar


    1/3 cup ground almonds


    2-1/2 cup fresh blueberries


    2 tsp cornstarch


    1/2 cup whipping cream


    1 tsp sugar substitute


    1/2 cup vanilla yogurt





    Beat egg yolks and sugar until light. Add almonds. Beat egg whites until stiff. Fold egg whites into egg yolk mixture.


    Line a 13 x 9 inch baking pan with waxed paper. Pour batter into the pan. Bake in a 325F oven for 12 to 15 minutes.


    Remove from the pan and cool. Cut into small squares.


    To make blueberry sauce, puree 1/2 cup blueberries in a food processor or blender. Dissolve cornstarch in cream. Cook cream, remaining blueberries, and blueberry puree over low heat until thickened, about 5 minutes. Cool. Stir in sugar substitute.


    To serve, line a serving dish with 1/2 of blueberry sauce; arrange cake squares over blueberry sauce. Top with remaining sauce. Spoon on yogurt. Serve immediately. ,Does anyone have any great New Year's recipes?
    I have a great punch recipe. The secret is the almond flavoring...





    INGREDIENTS


    1/3 cup white sugar


    1 quart cranberry juice


    2 cups unsweetened pineapple juice


    3 tablespoons almond extract


    1 (2 liter) bottle ginger ale


    DIRECTIONS


    In a large container, mix together sugar, cranberry juice, pineapple juice and almond extract. Refrigerate for 1 day.


    To serve, pour juice mixture into a punch bowl. Stir in ginger ale.

    Here is a recipe I just recieved via email just today from meatout mondays...i am a vegetarian and i love recieving great healthy meal recipes...i have not tried this one yet but i thought id pass it on...








    Black Bean %26amp; Tomato Quinoa


    Black beans are an excellent source of fiber and protein. Quinoa is a light crispy protein-packed whole grain. Mix them together and you鈥檝e got a high protein meal with energizing nutrients to keep you strong and healthy! Try this satisfying Black Bean %26amp; Tomato Quinoa鈥?delicately enhanced with a touch of lime, this dish packs the power of whole grains and tons of flavor.





    Ingredients:








    2 tsp. grated lime zest, grated peel


    2 Tbs. fresh lime juice


    1 Tbs. olive oil


    1 tsp. sugar


    1 cup quinoa


    1 can (15 oz.) black beans, rinsed %26amp; drained


    2 medium tomatoes, diced


    4 scallions, chopped


    1/4 cup chopped fresh cilantro


    salt %26amp; pepper (to taste)





    Directions:





    In a large bowl, whisk lime zest and juice, olive oil, sugar, 1/2 tsp. salt, and 1/4 tsp. pepper.


    Wash quinoa in cold water, drain, and place in a medium pot of boiling water with 1 Tbs. of salt.


    Cook with pot uncovered until almost tender (about 10 minutes).


    Drain in sieve, then set sieve in same pot with 1 inch of simmering water, but avoid touching each other.


    Cover quinoa with a folded kitchen towel, then cover sieve with a lid and steam over medium heat until tender, fluffy, and dry (about 10 minutes).


    Remove pot from heat and remove lid; let stand, still covered with towel, for 5 minutes.


    Add quinoa to dressing and toss until dressing is absorbed, then stir in remaining ingredients and salt and pepper to taste.

    ***Quinoa Muffins***





    1 cup quinoa, rinsed


    1/4 cup vegetable oil, such as safflower or canola


    2 cups all purpose flour


    3/4 cup packed light brown sugar


    1 1/2 tsp. baking powder


    1 tsp. salt


    1/2 cup raisins


    3/4 cup whole milk


    1 large egg


    1 tsp. pure vanilla extract





    Preheat oven to 350. In a medium saucepan, bring quinoa and 1 cup of water to a boil. Reduce to a simmer. Cover and cook until water is absorbed and quinoa is tender..11-13 minutes.


    Meanwhile, grease a standard muffin tin with oil, and dust with flour. Tap out excess.


    In a medium bowl, whisk together flour, sugar, baking powder, raisins, salt, and 2 cups cooked quinoa. Reserve any leftover quinoa for another use.


    In a small bowl, whisk together egg, oil, milk, and vanilla. Add wet mixture to flour mixture and stir just till combined.


    Divide among muffin cups.





    Bake until toothpick comes out clean, 25-30 minutes. Cool 5 minutes in pan. Transfer to wire rack and cool completely.

    Curried Quinoa Recipe


    Serves Six to Eight


    1 Cup Quinoa


    1陆 Tbsp. Vegetable Oil


    陆 Onion Diced (about 4 or 5 ozs.)


    1 Tsp. Grated Fresh Ginger Root


    陆 Fresh Green Chile (Finely Chopped)


    1 Heaping Tsp. Turmeric


    1 Heaping Tsp. Coriander


    录 Tsp. Ground Cinnamon


    陆 Tsp. Salt


    1戮 Cups Water


    陆 Cup Fresh or Frozen Peas





    Rinse quinoa with cold water. Use a fine mesh filter or coffee filter. If you're a klutz like me use the fine mesh filter or a lot of quinoa is going to wind up in the sink!











    Place oil and diced onions in a heavy saucepan. Saute the onions on medium high heat for four to five minutes.





    Add the ginger root, chile, and quinoa. Cook for one minute stirring constantly.


    A fine, white spiral appears around the grain as it cooks.





    Stir in the turmeric, coriander, cinnamon, and salt. Cook for one minute stirring constantly.





    Add the water and bring it to a boil. Cover, reduce heat, and simmer for 15 minutes.





    Stir in peas. Cover and cook for four or five minutes or until peas are tender and all the water has been absorbed.





    Fluff with a fork before serving.

    I tried this and really enjoyed it....I purchased and used vegetable stock.





    Quinoa with tomatoes and leeks





    1 cup quinoa


    1 1/2 cups stock


    2 large leeks


    2 cloves garlic, crushed


    1 tablespoon olive oil


    1 can tomatoes


    1/4 cup currants


    1 tablespoon ground cumin


    1 teaspoon cinnamon


    1/2 teaspoon turmeric





    Slice leeks in half lengthwise and wash well to remove any dirt.





    Place quinoa in a sieve and rinse well for several minutes





    Place leeks and garlic in nonstick pan with a tablespoon of olive oil and cook until soft. Add spices to the leeks and stir until well mixed. Add quinoa and cook for a couple minutes then add the stock, currants and drained tomatoes, bring to a boil, lower heat and simmer, covered, for 15-20 minutes until done.
    I like it with Honey, Cinnamon, Almonds %26amp; Milk for breakfast.

    They are fabulous as a salad. This recipe is simple, hope you like it. Ingredients needed are Quinoa, italian parsley, cucumber, tomato, green onion, shrimps (optional) salt, pepper, olive oil, lemon juice(optional). Cook Quinoa and shrimp separately. next proceed with rough chopping remainder ingredients. when Quinoa and shrimps are done(coarse chop shrimps) toss ingredients together. Season with salt, pepper and olive oil and lemon juice(optional) mix well and let sit in fridge overnight for flavors to blend. enjoy next day.

    I applaud you for trying to cook with this grain, it has the highest protein content of any whole grain %26amp; is therefor very useful in a heart healthy diet.





    I until recently worked at a local health food store deli and we made this wonderful salad for the deli case with it. I don't remember the whole recipe in specific amounts, I mostly cook by eyeballing amounts, but here goes:





    Cook and cool 1 batch quinoa as directed and set aside. Chop finely scallions, and green pepper %26amp; mix in w/quinoa in large bowl. In a seperate small bowl, make an herbal vinaigrette using 2 Tablespoons dijon mustard to 1/3 cup red wine (or your other fave) vinegar, 2 teaspoons garlic (fresh if you have it) and some dried herbs (I like basil and thyme but use your faves). Drizzle in while whisking constantly 1/4 of extra virgin olive oil (it should look like a cloudy salad dressing). Crumble some feta cheese over the quinoa mixture, pour on the dressing to taste and toss. Enjoy!

    Reviewed on Nov. 6, 2003 by JEWEBER Nice alternative to rice. Used low sodium low fat chicken broth - there was no need to add additional butter or salt to make it tasty. The texture is similiar to wild rice, which my son doesn't like so he wasn't a fan, but the rest of the family and the neighbors loved it. Will definately make again.
